이 연구에서는 천연 항산화소재와 미백소재 개발을 위하여 미강을 Bacillus subtilis에 접종하여 40 ℃에서 36h 동안 발효한 미강추출(RFB)과 80 % ethanol을 이용한 미강추출물(RB)을 사용하여 연구하였다. 추출물의 free radical 소거활성, superoxide radical 소거활성, hydroxyl radical 소거활성은 농도 100 μL/mL에서 가장 큰 활성을 나타내었고 리놀산을 이용한 지질과산화 억제 활성 또한 농도 100 μL/mL에서 가장 큰 활성을 나타내었고, RB에 비하여 RFB의 더 높은 항산화 능을 확인하였다. Mushroom tyrosinase의 활성 저해효과는 100 μL/mL 농도에서 mushroom tyrosinase의 활성을 80 % 저해하였으며 이는 vitamin C에 비해 더 높은 활성을 나타내었다. 그러므로 우리는 미강 발효추출물이 우수한 항산화와 미백 효능을 갖는 화장품 소재로서 개발 가능성이 클 것으로 기대된다. In this study, we investigated rice bran fermented by Bacillus subtilis (RFB) at 40 ℃ for 36 h to develop a new natural antioxidant and whitening agent for new natural cosmetics. RFB showed reactive oxygen species (ROS) scavenging activities in 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical, superoxide radical scavenging activities and hydroxyl radical scavenging activities at a concentration of 100 μL/mL. DPPH, superoxide radical scavenging activities and hydroxyl radical scavenging activities were higher in the RFB than in the RB. Inhibitory activity on auto-oxidation of linoleic acid is also highest at a concentration of 100 μL/mL. RFB showed the higher inhibitory activity than RB in auto-oxidation. RFB reduced intracellular tyrosinase activity about 80 % at a concentration of 100 μL/mL. Therefore, we suggest that RFB could be used as a useful antioxidant and whitening agent.

내독소인 LPS로 처치된 흰쥐에 대한 막걸리의 항산화 활성효과

Modern people have begun to have the nationwide interest in the rice wine called Makgeolri which is one of the traditional Korean alcoholic liquors. This study was performed to investigate the effects of Sansung Makgeolri extract (SM) on antioxidation together with the determination of pH and dissolved oxygen (DO) in the progress of fermentation in the lipopolysaccharide(LPS)-treated rats. We examined the levels of SOD (superoxide dismutase),CAT (catalase), GPx (glutathione peroxidase) in liver homogenates and the histopathological observations in liver tissue. LPS-treated group markedly decreased the levels of SOD, CAT and GPx. But SM + LPS-treated group significantly increased the levels of them. Furthermore, the antioxidative effects of SM were supported by the histopathological observations in liver tissue which showed severe inflammation and necrosis in LPS-treated group,compared to the attenuated inflammation and necrosis in SM + LPS-treated group. This results suggested that SM could be a candidate of antioxidative material in spite of alcoholic liquors.
