        국내 육성 귀리 품종의 이화학적 특성 및 식이섬유 함량 분포

        Consumption of oat-based food is rapidly increasing due to consumer preference for functional foods. Until now, breeding is focused on the development of naked oat for food in Korea. Hulled oats recognized as forage have strong merits for yield and stability in cultivation except milling properties. Lately, advanced milling technology provides an opportunity to use hulled oats for food. Therefore, the processing characteristics of hulled oats are of great importance for food use. This study examined the physicochemical properties and dietary fiber of 9 Korean oat cultivars (4 hulled oats as compared with 5 naked oat cultivars). Findings showed that the color values (i.e. L and W) of hulled oat cultivars in seed and flours are lighter than the naked oats. The protein and ash contents are higher in hulled oats as compared with naked oats. The unsaturated fatty acid (USFA), mainly C18:1, C18:2 were 80~83%. USFA of ‘Daeyang’ (DY, naked) and ‘Jopung’ (JP, hulled) were 82.0 and 81.9% respectively. Total Dietary fiber and Total β-Glucan contents ranged from 13.2 to 20.6% and from 3.4 to 4.1% in oat flours. The ‘DY’ (4.10%, naked), ‘JP’(4.09%, hulled) and Highspeed (4.07%, hulled) showed high levels of β-Glucan contents. Findings of the study will provide useful information in extending the use of hulled oats for food.

        품종별 귀리 메탄올 추출물의 항산화 성분 및 항산화 활성

        본 연구에서는 국내에서 개발된 귀리 품종의 항산화 성분 및 항산화 활성을 측정하고 항산화 성분과 활성 간의 상관관계를 분석하고자 하였다. 항산화 성분으로는 총 폴리페놀과 vitamin E 함량을 측정하였으며 항산화 활성은 2,2"-azinobis-(3-ethylbenzothiazoline-6-sulphonic acid)(ABTS) 및 1,1-diphenyl-2-picrylhydrazyl(DPPH) 라디칼 제거능, 환원력, 금속이온 제거능을 측정하였다. 총 폴리페놀 함량은 83.41~130.59 mg/100 g으로 나타났으며 쌀귀리 품종의 총 폴리페놀 함량이 겉귀리보다 높은 것으로 나타났다. 또한 vitamin E 함량은 0.54~1.90 mg/100 g으로 나타났으며 중모 2005 품종을 제외한 모든 품종의 귀리에서 α-tocotrienol의 비중이 가장 높은 것으로 나타났다. ABTS 라디칼 제거능, DPPH 라디칼 제거능 및 환원력은 대양 품종이 각각 116.14 mg TEAC/100 g, 38.58 mg TEAC/100 g 및 A700=0.92로 가장 높은 활성을 보였다. 항산화 성분과 활성 사이의 상관분석 결과 총 폴리페놀 함량과 ABTS 라디칼 제거능(0.847, P<0.01), DPPH 라디칼 제거능(0.887, P<0.01) 및 환원력(0.653, P<0.01) 사이에 높은 상관성을 나타내어 귀리 메탄올 추출물의 항산화 활성에 기여하는 성분은 폴리페놀성 화합물인 것으로 사료된다. 본 연구 결과는 귀리의 항산화 성분과 항산화 활성 연구에 있어 기초자료로서 활용될 수 있을 것으로 생각하며, 국내 개발 귀리 품종의 이용 증진에 영향을 끼칠 것으로 기대한다. Oats (Avena sativa L.) were evaluated in recent years as a promising crop for increasing the nutritional quality of foods, due to their abundance in many bioactive compounds. The objectives of this study were to determine antioxidant compounds and antioxidant activities of nine oat cultivars and investigate the relationships between antioxidant compounds and antioxidant activities in oat cultivars. The contents of total polyphenolics and vitamin E in oat cultivars were analyzed by spectrophotometric methods and normal phase HPLC, respectively. 2,2"-Azino-bis-(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activities, reducing power, and chelating effects were used to compare the relative antioxidant activities of oat cultivars. In this study, total polyphenolic and vitamin E contents of oat cultivars ranged from 83.41 to 130.59 mg gallic acid equivalents/100 g and 0.54 to 1.90 mg/100 g, respectively. High levels of ABTS radical (116.14 mg Trolox equivalent antioxidant capacity (TEAC)/100 g) and DPPH radical (38.58 mg TEAC/100 g) scavenging activities and reducing power (A700=0.922) were found in Daeyang. Significant correlation was evaluated between total polyphenolic contents and their antioxidant activities, namely ABTS and DPPH radical scavenging activities and reducing power. A low correlation was observed between vitamin E contents and their antioxidant activities. The results of this study could have an impact on oat consumption by enhancing consumer awareness of the health benefits of oats.

        추출용매별 귀리의 항산화 및 암세포 증식 억제 활성

        본 연구에서는 귀리 추출물에 대한 항산화 활성과 암세포 증식 억제 활성을 측정하고 각 추출용매에 따른 차이를 비교분석하고자 하였다. 추출물의 항산화 활성은 2,2-azinobis(3-ethylbenzothiazoline-6-sulphonic acid)(ABTS)와 1,1-diphenyl-2-picrylhydrazyl(DPPH) 라디칼 제거능 및 환원력을 이용하여 측정하였으며, 암세포 증식 억제 활성은 대장암, 폐암 및 유방암 세포주를 이용하여 평가하였다. 총 폴리페놀 함량, ABTS 및 DPPH 라디칼 제거능, 환원력 모두 methanol 추출물이 각각 8.2 mg gallic acid equivalent/g residue, 12.1 mg Trolox equivalent antioxidant capacity(TEAC)/g residue, 4.4 mg TEAC/g residue 및 A700=0.39로 가장 높은 활성을 나타내었다. 또한 암세포 증식 억제 활성은 methanol 추출물이 대장암(HCT116), 폐암(NCI-H460) 및 유방암(MCF7) 세포에서 각각 69.5, 75.2 및 84.8%로 높은 증식 억제 활성을 나타내었다. 따라서 추출용매에 따라 귀리의 항산화 및 암세포 증식 억제 활성에 차이가 나타나며, 이는 추출용매의 극성에 따라 추출된 생리활성 물질, 특히 폴리페놀 화합물의 용해도 차이로 생각된다. 본 연구 결과는 점차 관심이 높아지고 있는 천연 항산화제 및 항암제로서 귀리에 관한 생리활성 연구에 있어 기초자료로 활용될 수 있을 것으로 생각되며, 귀리의 소비 촉진에 영향을 끼칠 것으로 생각된다. The objective of this study was to determine the antioxidant and anti-proliferative activities of methanol, ethanol, acetone, and ethyl acetate extracts from oats (Avena sativa L.). Total polyphenol contents of extracts were analyzed by Folin-Ciocalteu assay. The antioxidant activities of extracts were determined by 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activities and reducing power. The anti-proliferative activities of colon (HCT116), lung (NCI-H460), and breast (MCF7) cancer cells were investigated. Among solvents, methanol extract showed the highest amount of total polyphenols, which was 8.2 mg gallic acid equivalents/g residue. High levels of ABTS radical [12.1 mg Trolox equivalent antioxidant capacity (TEAC)/g residue] and DPPH radical (4.4 mg TEAC/g residue) scavenging activity and reducing power (A700=0.39) were found in methanol extracts. Moreover, methanol extracts indicated higher anti-proliferative activities against HCT116 (69.5%), NCI-H460 (75.2%), and MCF7 (84.8%) cells compared with other extracts. The results show that methanol was the best solvent for extraction of antioxidant and anti-proliferative compounds from oats. Moreover, notable antioxidant and anti-proliferative activities of oats could have significant health benefits.

        귀리 도정 부위별 메탄올 추출물의 항산화 성분 및 항산화 활성

        본 연구에서는 국내에서 개발된 귀리의 도정 부위별 메탄올 추출물의 항산화 성분 및 항산화 활성을 비교 · 분석하고자 하였다. 항산화 성분으로는 총 폴리페놀 및 플라보노이드 함량을 측정하였으며 항산화 활성은 ABTS 및 DPPH 라디칼 제거능, 환원력을 측정하였다. 실험 결과 귀리의 도정 부위별 메탄올 추출물 중 bran 추출물의 총 폴리페놀 및 플라보노이드 함량이 각각 41.53 mg gallic acid equivalents/100 g sample 및 12.07 mg catechin equivalents/100 g sample로 whole grain 및 endosperm 추출물보다 높은 함량이 함유되어 있는 것을 확인하였다. 또한, 이러한 항산화성분이 다량 분포하는 bran 추출물의 ABTS 및 DPPH 라디칼 제거능, 환원력이 각각 42.34 mg Trolox equivalent antioxidant capacity(TEAC)/100 g sample, 24.18 mg TEAC/100 g sample, A700=0.76으로 나타나 whole grain 및 endosperm 추출물보다 우수한 항산화 활성을 가지는 것으로 나타났다. 본 연구 결과는 귀리의 도정 부위별 항산화 성분 및 항산화 활성 연구에 있어 기초 자료로써 활용될 수 있을 것으로 생각하며, 우수한 항산화 성분 및 활성을 가지는 귀리의 bran층은 기능성 식품의 제조에 있어 좋은 소재로 활용될 수 있을 것으로 생각한다. Oats (Avena sativa L.) are well known for having high contents of bioactive compounds and health benefits. The objective of this study was to evaluate the antioxidant compounds and antioxidant activities of methanolic extracts from milling fractions and whole grains of oat. The contents of total polyphenolics and flavonoids were analyzed by spectrophotometric methods. ABTS radical and DPPH radical scavenging activities and reducing power were used to compare relative antioxidant activities of milling fractions from oat. Total polyphenolics and flavonoids were much more abundant in oat bran extract than in extracts from whole grain and endosperm. In addition, high levels of ABTS radical (42.34 mg Trolox equivalent antioxidant capacity (TEAC)/100 g sample) and DPPH radical (24.18 mg TEAC/100g sample) scavenging activities and reducing power (A700=0.76) were detected in oat bran. The results of this study indicate that oat bran has significantly higher antioxidant activities and appears to have significant health benefits.

        흰앙금 제조에 적합한 종피색이 황백색인 팥 ‘흰나래’ 육성

        With the aim of developing an adzukibean variety to manufacture white bean pasta, an adzukibean (Vigna angularis) cultivar, “Huinnarae” was developed in 2014. “Huinnarae” was developed in 2003 by crossing Gyeongwon and Sodubanggei 3. It was a late-maturing variety, having a bright yellow seed coat. Moreover, “Huinnarae” showed more white lightness than “Chungju.” Its plant height was 79 cm, and its yield components showed 6.7 pods per plant and 16.6 g of 100-seed weight in the regional yield trial(RYT). Further, in the RYT conducted for the three years, the average yield potential of “Huinnarae” was 1.86 MT/ha, which was 4% lower than that of “Chungju.” Moreover, it is suitable to make white bean pasta. “Huinnarae” is expected to increase diversity, create new demand surges, and improve the value and consumption of adzukibean (Registration 6050).

        추출방법에 따른 미강 추출물의 항산화 활성 비교

        본 연구에서는 미강의 산업적 이용 증대 및 고부가가치 소재개발을 목적으로 항산화 활성을 증가시킬 수 있는 추출 방법을 개발하기 위하여 용매 추출법, 검화 추출법 및 초임계유체 추출법을 이용하여 제조한 미강 생리활성물질 농축물의 항산화 활성을 비교하였다. 항산화 활성은 ABTS 및 DPPH 라디칼 제거능, 환원력, 지질과산화 억제능을 이용하여 측정하였다. ABTS 및 DPPH 라디칼 제거능, 환원력 모두 unsaponifiable matter(USM)가 각각 671.7 mg TEAC/g, 330.7 mg TEAC/g 및 A700=1.14로 가장 높은 활성을 나타내었다. 지질과산화 억제능은 USM 및 supercritical fluid extract(SFE)가 각각 68.7% 및 75.4%로 methanol extract(ME)의 47.8%보다 우수한 활성을 나타내었다. 따라서 검화 추출법으로 제조한 USM은 SFE 및 ME보다 상대적으로 우수한 항산화 활성을 가지며 미강을 기능성 소재로 개발하기 위한 추출 방법으로 활용 가능할 것으로 생각된다. 또한, 미강 생리활성물질 농축물은 기능성 증진을 위한 다양한 식품 소재로의 활용 가능성이 있을 것으로 생각된다. The objective of this study was to determine the antioxidant activities of rice bran extracts by three different extraction methods. Rice bran was extracted by solvent extraction, saponification extraction, and supercritical fluid extraction. The antioxidant activities of the rice bran extracts were determined based on ABTS and DPPH radical scavenging activities, reducing power, and lipid peroxidation inhibitory activity. The unsaponifiable matter (USM) extracted by the saponification method showed higher ABTS (671.7 mg Trolox equivalent antioxidant capacity (TEAC)/g) and DPPH (330.7 mg TEAC/g) radical scavenging activities as well as reducing power (A700=1.14) than those of the solvent extract (ME) and supercritical fluid extract (SFE). Inhibitory effect on lipid peroxidation was higher in USM (68.7%) and SFE (75.4%) compared to ME (47.8%). USM indicated relatively higher antioxidant activities compared with those of SFE and ME. These results show that the saponification method for extraction of USM from rice bran extracted was the most effective method for enhancement of antioxidant activity. In addition, these extracts from rice bran could be used as functional ingredients in the food industry.

        담적색 종피색의 내도복 신품종 팥 ‘홍경’ 육성

        In 2008, a new adzuki bean (Vigna angularis) cultivar, ‘Honggyeong’, was developed using artificial cross between ‘Milyang 7(SA9709-2B-8-2-4-4-1)’ and ‘SA0001’ at the National Institute of Crop Science, RDA, Korea. It was selected for further yield trials-named‘Miryang 36’. This cultivar was prominent and showed desirable agronomic traits, such as lodging tolerance, high yield, and high antioxidantactivity during the regional adaptation yield trials (RYT) from 2016-2018. ‘Honggyeong’ was finally released as a new cultivar in 2018 andits distinct phenotypic traits included a semi-determinate growth habit, yellow flowers, green embryonic axis, bright red seed-cort color, whitehilum, and large seeds (18.4 g per 100 seeds). The average yield of ‘Honggyeong’ was 2.06 MT/ha in the regional yield trials (RYT), whichwas slightly higher than that of the check cultivar (1.89 MT/ha), ‘Chungju’ (Registration No. 7934).
