        한산 거제만의 환경특성이 양식 굴의 비만에 미치는 영향

        Long line suspended culture of oysters has been started commercially in Hansan-Koje Bay since 1969. However, its Annual production has been decreased and culturing periods extended in recent years. So, we investigated environmental parameters and food organisms to identify the causes of poor fatness of oysters in Hansan-Koje Bay from February to November, 1994. As the result, the Water quality of Hansan-Koje Bay was found to be good for culture. For example, the mean concentration of COD was 1.35㎎/ℓ, phosphate phosphorus was 0.30㎍-at/ℓ and dissolved inorganic nitrogen was 4.68㎍-at/ℓ. However, the Hwado island and the inner part of the Hansan-Koje Bay were found to be eutrophicated due to various contaminants transported by land-based activities. But in the central part of the Hansan-Koje Bay where the oyster farms have been developed densely, the level of nutrient concentration was very low. During the study period, the dominant species of phytoplankton was Chaetoceros spp. with the percentage of 72.6%-87.8% and the mean values of Chlorophyll-a concentration and phytoplankton standing crops were 2.05㎎/㎥ and 188ind./㎖, respectively. The distribution of these parameters also showed similar trends those of nutrients. Especially, chlorophyll-a contents was very low with the concentration of below 0.5㎎/㎥ at central part of the Bay, Juklimpo. The fatness of oysters and the eutrophic index in this area were 18.1% and 0.54, respectively. These values were lower than those of other culturing farms in the southern coastal areas in Korea. Therefore, we estimated that the insufficient food supply due to the low level of nutritional status was the major factors affecting the poor fatness of the Pacific oysters in Hansan-Koje Bay.

        규조류 Chaetoceros sp. 증식 저해균 Alteromonas sp. SR-14 의 분리 및 특성

        Marine bacteria inhibiting the growth of the diatom, Chaetoceros calatrans were screened from seawater samples collected at south coast of Korea in 1996. Six strains were isolated from those samples. Among them, a bacterium SR-14 strain had the strongest inhibition activity against the alga. The selected SR-14 strain was identified as an Alteromonas sp. (supposed to be Alteromonas colwelliana) according to its biochemical results. Alteromonas sp. SR-14 was able to grow in raw seawater, aged seawater, Conwy medium for culture of microalgae and C. calcitrans culture filtrate. T6e host ranges of Alteromonas sp. SR-14 were C. calcitrans, C. muclleri and C. negracile among 10 speaes of diatom. All of the Chaetoceros spp. tested were inhibited by the Alteromonas sp. SR-14, however, the growth of the other genera in Bacillariophyceae was not inhibited.

        넙치 , 범가자미 및 잡종 ( 넙치 ♀ × 범가자미 ♂ ) 근육의 식품화학적 특성 비교

        The proximate composition, mineral content, fatty acid composition, ATP related compounds, amino acid compositon, color and texture were investigated with dorsal and ventral muscle from olive tlounder, spotted flounder and hybrid (olive flounder ♀ × spotted flounder ♂). Spotted flounder and hybrid were higher in moisture content, and lower in crude protein content than those of olive flounder. Patassium content in hybrid was higher than that in olive flounder and spotted flounder. Hybrid was lower in calcium, iron, manganese content, and higher in magnesium content than olive flounder and spotted flounder. The contents of saturated fatty acid, unsaturated fatty acid and docosahexaenoic acid (DHA) in hybrid were intermediate level of spotted flounder and olive flounder. Fatty acid composition of dorsal muscle was slightly similar to ventral muscle. Adenosine triphosphate (ATP) and its related compounds contents and amino acid content in hybrid were intermediate level of spotted flounder and olive flounder, and these compounds of dorsal muscle were slightly similar to those of counterpart. The major amino acids such as aspartic acid, glutamic acid, leucine and lysine were very similar to all the samples. Total amino acid and essential amino acid contents in dorsal muscle were slightly higher than those in ventral muscle. Free amino acid content and composition in hybrid were similar to spotted flounder, and free amino acid content in dorsal muscle was higher than in ventral muscle. The lightness of hybrid and spotted flounder was stronger than that of olive flounder, and was stronger in dorsal muscle. The breaking strength of hybrid was slightly lower than that of spotted flounder, and was stronger in dorsal muscle.
