      • 비닐 하우스 재배 채소류의 성분함량에 관하여

        This study was conducted to investigate the nutritional composition of several vegetables, such as green pepper, squash, cucumber, tomato, perilla leaves, lettuce, Chinese cabbage, radish leaves and roots which were grown in vinylhouse. Proximate components and vitamins, such as thiamin, riboflavin and ascorbic acid of these vegetables were determind. Generally, vinyl house-grown vegetables showed high moisture and minerals and low protein, fat, sugar and fiber than field grown vegetables. On the other hand, vitamin contents showed different pattern depending on the kind of vegetables.

        Croaker and pork which have been consumed mostly in Korean common home were cooked by four kinds of methods(boiled, broiled, deep fried, pan fried) and extracted with 50% methanol. In all kinds of cooking methods, pork extracts showed higher mutagenesis than croaker extracts and especially the extract of pan fried croaker and pork showed high mutagenicities with S9 mix. The extract after nitrite treament showed higher mutegenicities than that after non treatment and after treatment with nitrite. Microwaved things showed lower mutagenesis than other mooking methods but when re-microwaved after storaging refrigerated , mutagenesis was increased 2-3 times and could see that the more the re-cooking, the higher the risk. but cooking with wegitables juice, seaweeds and other ingredients could reduce the mutageincity of protein food. Therefore It is recommended that protein foods were cooked with vegitables and see foods which have much anti-cancer materials.

      • 原子吸光分析法에 依한 血淸中 亞鉛의 定量

        Contents of Zinc in normal human serum and acne patient serum samples, were determined by means of atomic absorption spectrophotometric method. According to the results, it is summerized as follows; 1. Zinc contents of normal serum (male and female) samples were 1.16 ± 0.04 ppm (mean ± standard error of mean) and those of acne patient serum (male and female) samples were 0.94 ± 0.08 ppm. This difference is significant (P < 0.05). Lower serum Zinc levels might be cause of acne in man. 2. Mean serum Zinc contents of normal male samples were 1.15 ppm and those of female samples were 1.17 ppm. And those of male patient samples were 0.89 ppm and those of female patient samples were 1.03 ppm. There were no significant sex differences in Zinc contents of normal and acne patient serum samples.

      • 種實油脂의 貯藏安定性에 關한 硏究

        In order to investigate the storage stability of seed oils, such as perilla oil, sesame oil, rapeseed oil and peanut oil, the oil seeds and seed oils were stored for 40 days at room temperature(20°-30℃), 4℃ and -20℃, respectively, than the acid value, peroxide value, TBA value and iodine value of the oil and oil extracted from the stored seeds, were determined. The results were as follows; Acid value, peroxide value and TBA value of these oils were increased sharply during storage at room temperature. Among seed oils, perilla oil was least stable and peanut oil was most stable. The oils extracted from stored seeds were more stable than the stored oils, thus the patterns of oxidation of the oils, extracted from stored seeds at room temperature, were same as that of oils. stored at -4℃. Generally, the quality of seed oils could be preserved when the crude seed oils were stored at the temperature below -20℃ and oils seeds at 4℃, respectively.

        The objective of this study was to elucidate the characteristics and functionalities, anti-hyperglycemic effect of Mulbervy leaves and Cortex Radicis, which has been used in the treatment for NIDDM. In this studies, there was observed the anti-hyperglycemic effect of Mulbervy leaves and Cortex Radicis extracts in normal mice loaded with sucrose and in alloxan-induced diabetic mice. The cold water extract and hot water extract reduced the peak rise in serum glucose after oral administration of sucrose and also demonstrated a fall in serum glucose level in alloxan-induced mice at a single dose of 400mg/kg orally or 200mg/kg intraperitoneally. Thus, Mulberry leaves and cortex radicis finally would produce biologically active substance, resulting in prevention of diabetes.

      • 산채중의 식이 섬유소에 관한 연구

        This study was performed to measure the dietary fiber's contents in various edible wild vegetables from domestic mountains by modified method of Southgate. Dietary fiber has been realized as indigestible carbohydrate or less-nutrious food. Since It has been increased to take animal food, refined or processed stuffs these days, and not to have much dietary fibers has caused some chronic diseases. Since Dr. Burkitte, Trowell laid stress on the importance of fiber, substantial studies on fiber has been conducted, and it has been proved for fibers to have some effects on the prevention of chronic disease and reduction of cholesterol concentration. The results of this study ; The total dietary fibers in Bracken, Chewy(aster scaber), Platycodon, Duduk(Codonopsis Ionceolata), Burdock are 29.92%, 29.34%, 20.52%, 13.44%, and 13.30% respectively. Soluble fiber in Platycodon is the highest, 6.98%, and the others are 5.0% or less.

        난류(卵類)의 지질성분 및 지방산 조성 분석 : 달걀, 기러기알, 총둥오리알 cage system , open barn system's hen egg , moscovy duck's egg mallard's egg

        일반란, 천연란, 고센란. 청등오리알, 기러기알의 지질성분 및 지방산 조성 분석 결과는 다음과 같다. 가식부 100g에 대한 지질 비율은 기러기알>고센란>청둥오리알>일반란>천연란 순으로 기러기알이 가장 높았고, 지질중 TG 비율은 일반란>고센란>천연란>청둥오리알>기러기알 순으로 일반란의 TG함량이 가장 높았다. Cholesterol함량은 난황 1g당 일반란이 14.14mg로 가장 높았고, 청둥오리알과 13.30mg으로 가장 낮았고, total lipid에 대한 cholesterol함량은 일반란이 4.5%로 가장 높았고, 청둥오리알과 기러기 알이 3.3%로 가장 낮았다. 방사구란과 비방사구란을 중성지질, 당지질 및 인지질의 함량을 측정한 결과 중성지질은 방사구란에 비해 비방사구란이 더 높았고, 당지질과 인지질의 경우에는 반대로 비방사구란보다 방사구란에서 더 높게 나타났다. 특수란의 경우 중성지질 함량은 청둥오리알보다 기러기알이 더 낮았고, 두 종류 모두 달걀류보다 더 낮은 값이였다. 또한 당지질과 인지질은 청둥오리알보다 기러기알에서의 함량이 더 높았고, 두 종류 모두 달걀류보다 높게 측정되었다 분획한 중성지질과 당지질, 인지질 모두 TLC에 의한 정성반응을 통해 성분 확인을 하였다. 필수 지방산 함량을 분석한 결과 linolenic acid 함량은 기러기알에서, linolenic acid 함량은 고센란에서 가장 높았다. Arachidonicacid와 EPA함량는 기러기알에서 가장 높게 나타났고,달걀류에서는 EPA값이 측정되지 않았다. DHA함량은 기러기알>천연란>일반란>고센란>청둥오리알 순으로 기러기알에서 가장 높게 나타났다. The lipid and fatty acid composition of various poultry eggs were examined after extracting yolk oils from the eggs of caged hen, open barn-reared hen, mallard, and muscovy duck. Total lipid content in 100 g of each edible portion was the highest in muscovy duck egg followed by open barn-reared hen, mallard, caged hen, and natural hen eggs. The triglyceride contents in the egg were in the order of caged hen, open barn-reared hen, natural hen, mallard, and muscovy duck. The cholesterol contents in total lipid were the highest in caged hen and muscovy duck eggs(4.5%), and the lowest in mallard(3.3%). Caged hen eggs had higher neutral lipid ratio among total lipid, but had lower ratio of glycolipid and phospholipid compared with those of the open barn-reared hens. For fatty acid composition, linoleic acid was the highest in the muscovy and linolenic acid was the highest in open barn-reared hen eggs. The contents of arachidonic acid and Eicosapentaenoic acid(EPA) were the highest in muscovy eggs. On the other hand, the content of Docosahexaenoic acid(DHA) was the highest in muscovy duck eggs.
