        This work was carried out to investigate the optimum processing conditions of Kangjung (a kind of Korean fried rice cake) of which processing methods were not still clearly known. Drying method of Kangjung base, (made of amylopectin rich rice powder) agitating tochnique for uniforming shamp and frying methods were examined as the inportant factors in Kangjung processing. And obtained results were as in the followings 1. The Kangjung base which was mixed with 200 gram (measuring cup. 2) unit of rice powder, was the most excellent in shamp stability and its uniformity when agitated 60 times rapidly for uniforming shamp and softening. 2. The optimum drying condition of the base mixture to get the kangjung of good quality was at 40℃ especially in the thermostating iron plate. And natural drying method at 10℃ was also effective to get the uncracked base. 3. The frying condition of kangjung base to get the optimum expansion and texture was at 120℃ for 2 minutes in the first time and dextrinized at 150℃ for 2 minutes in the second time.

      • 團體給食의 運營管理에 관한 實態調査 硏究 : 主로 工業團地를 中心으로

        The study is to grasp the phenomenon and the reality of the institutions of industrial feeding and to grope the efficient plan for the improvement of its management in Korea. The research is operated on the object of the enterprises at 351 places, mostly in Seoul, Kyeong-Ki, Kyeong Buk, Kyeong Nam regions. The result of the actual condition investigation reaches at the following conclusion. 1.From the institution scale of indestrial feeding, the scale of the total supplying a day is from 80 to 13,000 feeding distribution, the scale of lunch supplying a day is from 50 to 7,000 feeding distribution, and the companies of four meals providing a day is 74.3%. 2.The distribution ratio of workers related with industrial feeding and supplying shows the follwing distribution;the institution stationes with nutritioner is 59.2%, with cooks 44.7%, desk workers 10.8%, and house mistresses 33.6%. 3.The sex of feeding workers is distributed as following;90% of thenutritioner is female, 66.1% of the cook male, and 31.9% of the kitcnhn workers in 112 feeding places all kitchen workers are female except the places employed 1 to 3 male workers. The age is as that; the nutritioner is the average 24, the cook 30, the kitchen worker 38. The service training shows as that;the nutritioner is the average 2 years, the cook 3 years, the kitchen worker 2 and half years. The wage is paid as that;for the nutrioner 10,000 a month, for the cook 70,000, for the worker 50,000. 4.The education level of the nutritioner is as that;the professional school graduates is 50.4%, teh college graduates 37.6%, and the junior college graduates 11.8%. 5.The direct control system of the enterprise in the management type is 80% and the full charge feeding place ofr the operational expenses is 71.2%. The dining room belonged to the general affairs section is 59.5%. This shows that Korean industrial feeding system is operated on the lateral view of labor management of the enterprise. 6.The feeding method is a regular meal in one set menu and self-service. It is 93$. 7.The number of feeding workers is proportionally bigger in smaller feeding scale comparing with feeding members. The bigger the feeding scales is, the more the ratio of feeding members per one worker. 8.No part time worker is employed. 9.The institution with feeding control committee is only 19.3% and the manager's interest for feeding facilities is low. 10.The provision of the basic feeding is at mostly a promodern level and the working environment is depended on totally hyman lavors. Therefore it is very difficult to expect to have a modern hygenic feeding management.

        앞 서론에 살펴본 것처럼, 어려운 상황에서 토착 미생물이란 농촌에 부를 향상시켜줄 수 있는 가장 기본 기초적인 농업에 첫걸음이자 21세기를 이끌어 나갈 이 땅에 보배요, 기둥인 것이다. 동·식물과 공존 공영하면서 인간에게 무한의 식량을 공급해주고 아주 오랜 옛날부터 미생물은 동·식물과 공생 관계를 유지하면서 산림을 키우고 곤충이나 작은 동물 같은 야생동물의 서식지를 제공하고 있다. 이렇게 자연과 인간은 공생공사하는 중요한 관계이면서도 그 동안 우리들은 자연을 너무나도 모르고 있었던 것 같다. 이제서야 땅에 가장 기본인 미생물에 관해서 조금이나마 알고 농사를 지을 수 있다면 그것보다 큰 수확은 없을 것이다.

      • 생선의 酵素處理를 利用한 감칠맛의 效果 增進에 關한 硏究

        Recently paratable nuclectides such as IMP (Inocine mono phosphate) have been used as a paratable seasoning in steed of MSG (Mono sodium glutamatel). In order to get a more effective and naturally paratable seasonings, shrimp and Alaska pollack were treated with proteolytic enzyme (Mildase) and deaminase. Several kinds of acid soluble nucleotides and their relative compounds were extracted. And obtained results were as in the followings. 1. When the proteolytic enzyme (Japanese Mildase) was treated to desolve the plasmamembranes of the Alaska pollack and shrimp muscle tissure, concentrations of extracted nucleotides and their relative compounds (AMP, ADP, ATP, IMP, Inocine, Hypoxanthine) were evidently higher than those of enzyme untreated cases. 2. Concentrations of AMP in both cases Alaska pollack and shrimp which was treated with the enzyme (Mildase and deaminase) was especially, decreased, on the contrary, IMP, inocine and hypoxanthine were much increased. And it was thought a majority of AMP was deaminated and changed into IMP. 3. Total amount of nucleotides contained in shrimp muscle was dominantly higher than that of Alaska pollack muscle, in both cases of enzyme treated or not. 4. Concentrated solution of enzyme treated shrimp showed a very strog paratable taste, and the paratable effect of the concentrated solution was excellently increased when MSG was added to some extent (less than 5%). And the combined solution was good enough to be used as a natural paratable seasoning.

        초고해상 탄성파 탐사를 위한 디지털 스트리머 시스템 개발

        Analog-based streamers for ultra-high-resolution seismic surveys are capable of additional noise ingress in water, but the specifications cannot be expanded through interconnections. Foreign-produced digital streamers have been introduced and used primarily at domestic research institutes; however, the cost is high and smooth maintenance is challenging. This study investigates the localization of ultra-high-resolution digital streamers capable of high-resolution imaging of a geological structure. A digital streamer capable of 24-bit, 10 kHz digital sampling of up to 64 channel data was developed through research and development. Various quantitative specifications of the system were designed and developed close to the benchmark model, Geometrics' GeoEel streamer, and the number of modules that make up the system was drastically reduced, reducing development costs and making it easier to use. The field applicability of the developed streamer system was evaluated in an in situ experiment conducted in the waters around the Port of Yeong-il Bay in Pohang in April 2022. 초고해상 탄성파 탐사를 위한 아날로그 기반의 스트리머는 수중에서의 추가적인 잡음 유입이 가능하며 상호 연결을 통한 규격 확장이 불 가능하다. 국내 연구기관 등을 중심으로 외산 디지털 스트리머가 도입되어 활용되고 있으나 비용이 높으며 원활한 유지보수가 어렵다. 이 에 본 연구에서는 천부 지질구조에 대한 높은 해상도의 영상화가 가능한 초고해상 디지털 스트리머 국산화 연구를 진행하였다. 연구개발 을 통하여 최대 64채널 데이터에 대한 24 bit급 10 kHz 디지털 샘플링이 가능한 디지털 스트리머가 개발되었다. 시스템의 다양한 정량적 인 규격은 벤치마크 모델인 지오메트릭스(Geometrics)사의 지오일 스트리머에 근접하게 설계되어 개발이 이루어졌고 시스템을 구성하는 모듈의 개수를 대폭 축소함으로써 개발 비용을 절감하고 간편한 활용이 가능하도록 하였다. 본 연구를 통해 개발된 스트리머 시스템은 2022년 4월 포항 영일만항 인근해역에서 이루어진 실 해역 시험을 통하여 현장 적용성에 대한 검토가 이루어졌다.
