Vol.31 No.2

In the recent studies, many researchers are interested in foods as functional components rather than nutrient sources. Cow's milk is considered as an excellent food sources because of its many nutrients. Casein is a major milk protein and has been reported to have hyperlipidemic and hypercholesterolemic effects. But several reporters have suggested that peptide fractions and hydrolysate of casein have hypolipidemic effects differing from intact protein, casein. Therefore, the objective of the study was to investigate how the casein peptide fractions affect lipid metabolism in rats fed normal or high fat diets. The peptide fractions and hydrolysate of casein were obtained by casein hydrolysis with trypsin. The male rats (Sprague-Dawley), weighing approximately 150 g, were fed each experimental diet containing casein (CAS), casein hydrolysate (CH), casein hydrolysate precipitate (Cpt) and two kinds of peptide fractions (CL & CB) for three weeks, respectively. In the expt I, the male rats were fed normal fat diets (7% soybean oil & cholesterol-free; Expt. I), and in the expt II, fed high fat diets (18% beef tallow & 1% cholesterol; Expt. II). Crude protein contents were calculated from nitrogen contents. Amino acid composition of each fraction was also analyzed. The concentration of total lipid, total cholesterol and triglyceride in serum, liver and feces were measured. As the results of study, the rats fed peptide fractions with normal fat diets (Expt. I) had no effects on total lipid, total cholesterol and triglyceride concentration in serum and liver and fecal excretion. However, in the rats fed hydrophobic casein peptide fractions (CB) with high fat diet, fecal lipids excretion were significantly increased and the lipids concentration of serum and those of liver tended to decrease, numerically. Also in the rats fed hydrophilic casein peptide fractions (CL) with high fat diet, total lipids and triglyceride concentration of serum were significantly decreased. And the lipids concentration of liver tended to decrease and fecal lipids excretion tended to increase, numerically. These results suggested that the possible hypolipidemic and hypocholesterolemic effects of both casein peptide fractions (CL & CB) could be partly due to increased fecal lipids excretion. And this effects might depend on dietary fat contents, which is high fat diet (18% beef tallow & 1% cholesterol diets).

Vol.17 No.4

This study was carried out to investigate perceptions of body image, body satisfaction, and dietary habits of beauty art major and non-major college students in Gyeonggi province. A total of 312 self-administered questionnaires (beauty art majors=145; non-majors=167) were analyzed. The means for height, weight, and BMI were 161.7 cm, 51.4 kg and 19.7, respectively. There were more majors who were underweight according to BMI classification than non-majors. Sixty-six percent of the subjects had previous weight control experience, and there was no significant difference between the majors and non-majors. The mean score for current body image was 4.61 out of a possible 9 points in the majors, which was significantly lower than 4.95 in the non-majors, and their perception of an ideal body image was thinner than their current body image. Those with more weight control experience had currently heavier perceptions of their body. The mean score for body satisfaction was 2.60 out of a possible 5 points, which was lower than the mean score for their attitudes toward the importance of their bodies. The mean score for dietary habits was 2.80 out of a possible 5 points, and there was no significant difference with dietary habits according to weight control experience or BMI classification. In both the majors and non-majors, there was a significant positive correlation between BMI and perception of current body image (p<0.001, p<0.001), and a negative correlation between BMI and body satisfaction (p<0.01, p<0.001). In the major students, there were significant positive correlations between dietary habits and body satisfaction (p<0.01), and attitudes toward the body importance (p<0.05); therefore, the greater their body satisfaction and body importance, the higher their scores for dietary habits.

Vol.21 No.2

This study was carried out to investigate dietary habits and related factors of female high school and college students in Gyeonggi Province. The total of 202 self-administered questionnairs(high school students, 77; college students, 125) were analyzed. Mean height and weight were 161Acm and 53.5kg, mean BMI was 20.6. The percentage of high school students who had adequate sleep was 46.2% and that of college students was 22.0%. Only 2.6% of high school students and 27.2% of college students answered they exercised regularly(p<0.001). The percentage of skipping breakfast and overeating was 70.3% and 88.6%, respectively. Frequency of outside eating was higher in college students than high school students(p<0.001). The percentage of those who used to intake over 8 cups of water and beverage daily was 10.4%. Average scores of food intake frequency showed 1.87 out of a possible 3 points, scores of vegetable intake frequency were significantly higher in the college students than high school students(p<0.05). The more sleep and the better physical health status they had, the more regularly they had breakfast and eating time. Unbalanced diet, and outside eating negatively correlated with regular exercise, and sleeping hours, respectively. Regular breakfast showed positive correlation with frequency and time of eating. The more regularly they had breakfast and eating time, the lower frequency of overeating and outside eating was. Scores of food intake frequency were significantly correlated with frequency of eating, regular breakfast, eating time, speed of eating and overeating.
