        인스탄트 메밀국수가 백서의 소화흡수율, 간장 및 혈청지질 농도에 미치는 영향

        인스탄트 메밀국수가 백서의 소화율, 성장율 및 조직내 지질함량에 미치는 효과를 검토할 목적으로 정제 사료에 탄수화물원으로서 설탕, 인스탄트 소맥면 및 메밀면 (소맥분중 10 및 30% 함유) 섭취군으로 4군으로 나누어 4주간 사육하였다. 체중증가량 및 식이섭취 량은 설탕섭취군보다 다른 3군에서 유의하게 높았으나, 실험군사이에 유의한 차이는 없었다. 본 연구에서 의식이 탄수화물원의 차이는 조소화율에 유의한 영향을 주지 않았다. 혈청 및 간장의 콜레스테롤 농도는 각 군간 유의한 차이는 관찰되지 않았다. 혈청 및 간장의 중성지질의 농도는 메밀면 섭취군에서 낮은 경향을 보였으나 유의한 차이는 없었다. 이러한 결과는 인스탄트(알파화) 메밀면(30% 함유)은 다른 주요 영양성분의 소화율에 장애를 주지 않으며, 완만하게 중성지질을 낮추는 효과가 있음을 시사한다. To evaluate a possible effects of instant buckwheat noodle on hepatic and serum lipids profiles, apparent digestibilities and growth rate, male young rats were fed diets containing sucrose as a control group, instant 100% wheat flour noodle, or instant wheat noodle fortified with either 10% or 30% buckwheat flour as experimental groups for 4 weeks. Weight gain and feed intake in the two buckwheat noodle fed groups were similar to those of the wheat flour fed groups. In addition, no significant differences were found in the apparent digestibilities among the groups experimented. There were no differences in the hepatic and serum cholesterol levels due to the diets. However, buckwheat noodle group showed a trend to decrease the liver and serum concentration of triacylglycerol, compared to the sucrose and 100% wheat flour groups. The addition of buckwheat flour to wheat flour up to 30% seemed to be effective in lowering the hepatic triacylglycerol level. After 10hr fasting, the serum glucose level of the buckwheat noodle group was similar to the levels of the other groups. The presented results indicate that instant noodle containing buckwheat at the level of 30% has a mild hypotriglyceridemic effects, and no adverse effects on the digestion of macronutrients in rats.

        흰쥐에 있어서의 메밀채소의 투여가 지질대사에 미치는 효과

        메밀채소의 in vitro HMG-CoA reductase 효소의 활성저해 및 흰쥐에 투여시 체내조직의 지질농도를 평가하였다. 메밀채소는 1~15㎝ 길이의 초장으로 재배하여 동결건조하였다. Rutin의 함량은 성장과정 중 크게 변화하지 않았다. 메밀채소의 물추출물은 in vitro HMG-CoA reductase 활성을 150%까지 활성화시켰다. 메밀채소 또는 rutin을 함유하는 콜레스테롤식을 4주간 흰쥐에 자유급식시켰다. 식이 메밀채소 및 rutin은 혈청콜레스테롤 농도를 감소시키는 경향이 있었다. HDL-콜레스테롤과 총 콜레스테롤 농도의 비는 rutin섭취군에서 약간 높았다. 혈청중성지질 농도는 대조군에 비하여 rutin섭취군에서 낮았으며, 메밀채소 투여군은 중간정도의 농도를 나타내었다. 간장콜레스테롤 농도는 메밀채소 투여군에서 현저하게 낮았다. 이러한 결과로 부터 콜레스테롤식을 섭취한 흰쥐에 메밀채소의 투여는 간장 및 혈청의 지질농도의 감소효과가 있음을 보여주며, 더 나아가 메밀채소에 의한 콜레스테롤 저하효과는 적어도 콜레스테롤합성조절에 기인되지는 않은 듯 하다. The effects of dietary buckwheat vegetables on the in vitro HMG-CoA reductase activity and lipids profiles of serum and liver in rats were evaluated. Buckwheat vegetables were cultivated in the range of 1~15㎝ of the plant height and dried. The content of rutin in the dried vegetables did not varied largely with the differences in the height of the vegetables. The water extract from buckwheat vegetables activated in vitro HMG-CoA reductase activity up to 150% of control. Male rats were fed on purified diets, supplemented with 0.12% cholesterol, containing dried buckwheat vegetables(BWV, 5% of diet) or rutin(0.25% of diet). Dietary BWV and rutin, compared with basal diet tended to decrease the concentration of serum cholesterol. The ratio of HDL-cholesterol to total cholesterol were higher slightly in the rutin-fed group than in the other groups. The concentration of serum triacylglycerol was lower markedly in the rutin-fed groups than in the control groups, and BWV group being intermediate. The concentration of liver cholesterol was lower significantly in the BWV group than in the other groups. The results show an effective cholesterol-lowering action of buckwheat vegetables in serum and liver of rats fed on cholesterolemic diets, and that the hypocholesterolemic effects of buckwheat vegetables are not likely to be due to the modulation of the cholesterol synthesis rate.

        혈청 콜레스테롤과 3 - Hydroxy - 3 - Methylglutaryl Coenzyme A Reductase

        Cholesterol have many essential functions as a component of cellular and subcellular membranes, metabolic precursor of bile acids and steroid hormones, and obligatory part of the metabolic systems involved in DNA synthesis and cell division. These essential funtions demand a continuous and appropriate supply of cholesterol to the tissues. Body cholesterol pool is maintained by the balance of acquirement from diets, de novo synthesis, and excretion either as bile acids or neutral steroids. In these metabolic process, cholesterol biosynthesis is controlled by the change in the activity of 3-hydroxy-3-methylglutaryl coenzyme A (HMG-CoA) reductase. Under most physiological or nutritional situations, the activity of this enzyme is adroitly regulated to maintain tissue cholesterol balance. Excess cholesterol accumulation in the cells induces the decrease in the number of LDL-receptor, followed by the increase in the level of serum LDL-cholesterol. Increase in the level of serum cholesterol appears to be an important determinant for the incidence of the coronary heart disease. Dietary intervention may be helpful in alleviating an increase in the level of serum cholesterol or body cholesterol pool.

        강원도 막국수와 메밀분의 성분학적 특성 및 시판제품 중의 메밀함량 감별법

        본 연구는 시중에서 판매되는 메밀 제품 중 밀가루의 혼합여부를 판별하기 위한 가능성을 검토하기 위하여 시도되었다. 메밀은 통합분, 내층분, 중층분, 외층분으로 나누어 제분하였다. 모든 메밀분중 회분, 단백질, 지방함량은 외층분=통합분>중층분>내층분 순으로 높았다. 밀가루와 메밀외층분은 회분과 단백질함량에서 비슷한 수준을 보였다. 칼륨과 마그네슘 함량은 모든 메밀분이 밀가루에 비하여 높은 수준을 보였다. Quercetin 유도체인 플라보노이드 함량은 외층분>통합분=중층분>내층분 순으로 높았으나, 밀가루에서는 검출되지 않았다. 통합분과 밀가루의 혼합분의 비율과 마그네슘 또는 회분량과의 사이에 신뢰할만한 상관관계가 관찰되어, 이를 기준으로 시판제품 중 메밀함량을 평가하였다. 그러나 이 성분은 메밀의 제분정도 또는 원료에 따라 크게 변동될 수 있어 밀가루의 혼합을 확인할 수 있는 지표로 사용하기는 어려울 것으로 사료된다. This study was tried to evaluate possibilities for discriminating the mixture degree of wheat flour from buckwheat products. Buckwheat was milled into four grades of powder, i.e. whole grain flour(WGF), inner layer flour(ILF), middle layer flour(MLF) and outer layer flour(OLF)), and these powders were mixed with wheat flour(WF) to make mixed samples. Ash, protein and fat contents of the buckwheat flours were high in the order of OLF=WGF>MLF>ILF. On the other hand, WF showed a similar content to OLF in ash and protein, and to ILF in fats. Potassium and magnesium contents were higher in all the buckwheat powder than in the wheat flour. Flavonoid contents were higher in order of OLF>WGF=MLF>ILF, but it was not in wheat flour. Although the reliable correlation between mix ratio and components, i.e. mag-nesium or ash analyzed were found, it did not seem to reflect sufficiently the expected variations of contents of original material components. Also, compositions of commercial buckwheat products were analyzed to evaluate the mixed ratio of buckwheat flour and wheat flour. The results suggest that the components analyzed in this study as putative marker were not good in determining whether or how much buckwheat products contained wheat flour.

        UPnP Bridge supporting diverse network interface has to meet standard requirements in order to be connected with legacy devices. It is able to provide or bridge a service description and device description according to a specification because IEEE1394 and USB have this standard requirements. But it is difficult to know whether it RS232C supports only serial communication and packet transfer. It need a document for the standard definition of communication protocol on UPnP device having such interface. By doing so, this document can understand device and packet type. This paper defines MFD(Message Field Description) and makes UPnP message converter. So it will be base to standardize supporting variable legacy device.

        셀레늄의 영양생화학

        Selenium (Se) obtained from dietary sources including cereals, grains and vegetables is an essential micronutrient for normal function of the body. Plants convert Se into selenomethionine and incorporate it into proteins in place of methionine, while higher animals synthesize selenoproteins containing selenocysteine. Excessive Se in the body is methylated stepwise to methylated selenium metabolites from selenide. Both inorganic and organic forms of selenium can be the nutritional sources in human, and they are transformed to selenide and then the amino acid selenocysteine attached to a specific tRNA<SUP>ser(sec)</SUP>. The selenocysteine (Sec) is incorporated into selenoprotein sequences by the UGA codon. The decoding of UGA as Sec requires specific mechanisms because UGA is normally read as a stop codon: cis -acting sequences in the mRNA (the sele-nocysteine insertion sequence, SECIS, within the 3’untranslated region) and trans -acting factors dedicated to Sec incorporation are required for incorporation of Sec during translation of selenoprotein mRNAs. Approxi-mately 25 selenoproteins have been identified in mammals. Several of these, including glutathione peroxidases, thioredoxin reductases and selenoprotein P, have been purified or cloned, allowing further characterization of their biological function. The antioxidant properties of selenoproteins help prevent cellular damage from free radicals which may contribute to the development of chronic disease such as cancer and heart disease. Other selenoproteins have important roles in regulation of thyroid function and play a role in the immune system. Daily selenium intake was reported to be 42.0±16.9 ㎍/day in Korean adult women. This review focuses on the metabolism and biological functions of selenium, and the nutritional status of selenium in the Korean population.
