Sporophylls from sea mustard, Undaria pinnatifida, which are by-products in seaweed production industries, were taken from Hansan Island, Tongyeong, and Gijang, Busan, and investigated for their fucoidan content and corresponding antioxidant activities. The extracted fucoidan yield from sporophylls of sea mustard samples from Tongyeong (TF) and Gijang (GF) were 12.1% and 13.6%, respectively. The antioxidant activities assessment of TF and GF extracts showed relative significant difference between samples, suggesting effect of location on bioactivities of fucoidan samples. GF was 50–68% more effective than TF against DPPH and superoxide radicals samples which may be attributed to the difference in their degree of sulfation and monosaccharide composition. Meanwhile, TF exhibited greater scavenging activity against hydroxyl radicals compared to GF which could be due to protein impurities.

The effects of supplementing ESP-FM (Erythrobactor sp.), freshwater Chlorella (Chlorella sp.), and baker’s yeast (Saccharomyces cerevisiae) on the nutritional value and mass production of Moina macrocopa, which is used as a live feed for fish fry production, was investigated. Consequently, the effects of feeding the enriched M. macrocopa to the nutritional composition of larval rockfish (Sebastes schlegel) and carp (Cyprinus carpio) was also investigated. Maximum density of M. macrocopa was reached within 15-21 days after inoculation (0.5 to 22 individual/mL), at various temperatures, and either decreased or remained almost constantly thereafter. Protein content and amino acids composition of M. macrocopa were found to be influenced by their respective diets while lipid and ash contents did not considerably change. M. macrocopa fed with baker’s yeast were low in n-3 HUFA content, and those fed on the freshwater chlorella were high in the 18:2n-6 and 18:3n-3 HUFA content, and in cultures treated with ESP-FM were high content in n-3 HUFA. The utilization of M. macrocopa as a substitute fish feed for carp and rockfish showed the enrichment nutritional content.
하이브리드 감압 열펌프 건조기를 이용하여 건조된 굴의 품질 특성

Effects of hybrid decompressor heat pump dryer in processing and storage stability of oysters was investigated. Dried oyster samples were stored at -20℃ for eight weeks and changes in physicochemical characteristics, nutritional and microbial content, and bioactivity were evaluated. Total aerobic plate count in dried oyster samples (L1-1, L1-3, and R2-2), after storage, were found safer at 18~19×103 CFU/g than that of commercial (CD-1) products at 27~30×103 CFU/g. DHA levels were higher in L1-1, L1-3, and R2-2 (17.87%, 17.46%, 17.89%, respectively) than in CD-1 (15.41%). Meanwhile EPA levels (13.20~16.87%) and total free amino acids (1325.2~1260.4 mg/100g) slightly varied among samples. K-values were found highest in CD-1 (34~42.1%) sample which indicated great decrease in freshness. 하이브리드 감압 열펌프 건조기의 효과를 파악하기 위하여 건조된 굴 제품을 8주간 저장하면서 일반성분의 변화와 글리코겐 함량의 변화 등을 조사하였다. 일반세균의 변화는 18~19×103 CFU/g으로 기존제품의 27~30×103 CFU/g 보다 안전하였다. 주요 지방산의 함유량은 건조기에서 건조한 시료의DHA 및 EPA 함량은 L1-1, L1-3 및 R2-2에서 각각 17.87% 및 14.80%, 17.46% 및 14.38%, 17.89% 및 14.99%이었고, 반면 CD-1은 각각 15.41% 및 13.20%로 약간의 차이를 보였다. 각 시료의 유리아미노산 함량에는 큰 차이를 보이지 않아 1325.2~1360.4 mg/100 g으로 나타났다. 그리고 선도를 나타내는 K 값에서는 하이브리드 건조기에서 건조한 시료가 저장기간 동안 매우 우수한 신선도를 나타낸 반면, 시판 굴의 시료에서는 34.0~42.1%로 나타났다.

In this study, 40 samples from different stages of drone pupae production were analyzed to assess the corresponding chemical hazards and to seek chemical hazard management measures for safe drone pupae production. Drone pupa, beehive, and imported pollen were collected from domestic farms. Domestic pollen was purchased online from farms. The samples were evaluated for mycotoxins, veterinary drugs, residual pesticides, and heavy metals. No mycotoxins were detected in all samples. As for veterinary drugs, berberine was detected in domestic pollen while trimethoprim was detected in imported pollen, but both components were not included in the honey residual standards of the Food Code and within acceptable level, even when standards for other livestock species were applied. Residual pesticides were detected in beehives, domestic pollen and imported pollen, which were all within appropriate levels for the residue standards of agricultural and livestock products in the Food Code. However, cyprodinil noted in beehive, was not included as pesticide residue standard in honey and exceeded the standard values for pesticide residue in other livestock products. Heavy metals were observed in all samples, but all appeared to meet criteria limits. Management of pesticides and veterinary medicines from the nearby environment should be strictly done to prevent chemical hazards from getting into drone pupae during production. Additionally, checking the inspection report when receiving raw and subsidiary materials and conducting a residual substance inspection after collection should also be properly implemented for safe drone pupae production.

Various types of dried laver Pyropia yezoensis have been produced in response to increasing demand and other laver goods manufactured using different processing methods are continuously being developed. The dried laver used in this experiment was initially heated at 165℃ for 3 seconds, followed by second heating at a high temperature (340- 350℃) to increase the storage period and enhance taste and flavor. Nutrient analysis of each sample heated under three conditions revealed that the protein and lipid contents were highest in samples from D company, while the carbohydrate contents remained relatively stable. After storage for 10 weeks at room temperature, changes in the composition were evaluated. The results showed decrease in protein (30%-49%) and essential amino acid contents. During storage, the major unsaturated fatty acids contained in dried laver slightly changed to 53.4%-56.0% in the form of EPA, while saturated fatty acids slightly increased to 18.4%-22.6% in the form of palmitic acid. The variables derived from fatty acid composition, such as atherogenic and thrombogenic, and hypocholesterolemic/hypercholes-terolemic dietary indices, and polyunsaturated fatty acids/saturated fatty acids ratio, also indicated reasonable levels of stability. However, the laver should be consumed within 2 months.

There is increased consumer demand for roasted seasoned laver Pyropia yezoensis, processed in various ways. The antioxidative activity of roasted seasoned laver was evaluated at different storage times and the quality of the roasted seasoned laver was improved. The laver was also heated at different temperatures for 3 seconds: 340℃ (SH340), 345℃ (SH345), 350℃ (SH350) and commercial roasted seasoned laver (D) was used as standard. The samples were stored in a transparent acrylic case (39×27×18 cm) at room temperature for 10 weeks. The total phenolic content began to decrease after 7 weeks of storage and was 395.2, 386.4, 395.8 and 416.4 μg/100 g for SH340, SH345, SH350 and D, respectively. The respective DPPH (1,1-diphenyl-2-picryl-hydrazyl) radical scavenging activity after 7 weeks of storage were 48.6%, 49.5%, 47.7% and 46.1%. The ferric reducing antioxidant power (FRAP) decreased rapidly after 7 weeks of storage due to the influence of sulfate groups. Therefore, the appropriate storage period and packaging method should be established based on these results.
