Bidirectional Interactions between Green Tea (GT) Polyphenols and Human Gut Bacteria

Green tea (GT) polyphenols undergo extensive metabolism within gastrointestinal tract (GIT), where their derivatives compounds potentially modulate the gut microbiome. This biotransformation process involves a cascade of exclusive gut microbial enzymes which chemically modify the GT polyphenols influencing both their bioactivity and bioavailability in host. Herein, we examined the in vitro interactions between 37 different human gut microbiota and the GT polyphenols. UHPLCLTQ-Orbitrap-MS/MS analysis of the culture broth extracts unravel that genera Adlercreutzia, Eggerthella and Lactiplantibacillus plantarum KACC11451 promoted C-ring opening reaction in GT catechins. In addition, L. plantarum also hydrolyzed catechin galloyl esters to produce gallic acid and pyrogallol, and also converted flavonoid glycosides to their aglycone derivatives. Biotransformation of GT polyphenols into derivative compounds enhanced their antioxidant bioactivities in culture broth extracts. Considering the effects of GT polyphenols on specific growth rates of gut bacteria, we noted that GT polyphenols and their derivate compounds inhibited most species in phylum Actinobacteria, Bacteroides, and Firmicutes except genus Lactobacillus. The present study delineates the likely mechanisms involved in the metabolism and bioavailability of GT polyphenols upon exposure to gut microbiota. Further, widening this workflow to understand the metabolism of various other dietary polyphenols can unravel their biotransformation mechanisms and associated functions in human GIT.
외식 및 호스피탈리티 분야의 ICT 연구동향에 관한 연구 : 2011-2020 국내 등재 학술지를 중심으로

본 연구는 2011년부터 2020년까지 10년간 국내 외식 및 호스피탈리티 분야의 5개 학술 등재지에 게재된 정보통신기술(ICT) 관련 논문 총 409개를 대상으로 하여 연구동향을 파악하고자 내용분석을 하였다. 분석을 통해 ICT 관련 어떠한 주제들이 연구되어 왔는지, ICT 연구의 그간 연구흐름 및 연구시기별 특성을 알아보고자 한다. 연구대상은 데이터를 연구대상으로 한 연구의 비중이 증가했으며, 연구 산업은 관광분야가 가장 많았지만, 여행지를 대상으로 한 연구가 점차 증가했고, 카지노에 대한 연구도 등장했다. 연구분야의 경우는 주로 마케팅이었으며, 세부주제는 온라인 마케팅이 연구되었다. 시기별 연구주제를 보면 2016년 이후에는 그간 주류였던 서비스 품질은 줄어들고, 정보기술 수용 및 데이터 분석은 증가했다. 한편, 연구 핵심어를 분석하면 모바일 서비스에 대한 연구 및 빅데이터 분야가 꾸준히 증가하였다. 마지막으로 연구방법과 분석방법을 분석했다. 본 연구는 이를 통해 국내 외식 및 호스피탈리티 분야의 정보통신기술 관련 연구동향을 이해할 수 있도록 하며, 향후의 연구방향을 시사해 준다. This study conducted content analyses in order to understand the research trend of food service and hospitality top 5 academic journals’ in total 409 ICT related articles which is published for ten years from 2011 to 2020. Through the analyses, this study aims to investigate what ICT-related topics have been studied, what the current research flow of ICT research is, and what the characteristics of each period of research are. As a result of the study, the rate of research using data has increased. Although tourism turn out to be the largest research industry, research on tourist destinations gradually increased, and research on casinos newly appeared. The research field was mainly about marketing, and the detailed research topics were online marketing related topics. When it comes to research topics by period, after 2016, the service quality, which had been the mainstream, decreased, and the acceptance of ICT and data analysis increased. Meanwhile, research on mobile services and big data have steadily increased according to research keyword analysis. Finally, the research method and analysis method were analyzed. Based on the implications from the results, this study provides ideas about ICT future research directions.
외식복합문화공간으로서의 플래그십 스토어 고객경험이 감정적 몰입과 브랜드 충성도에 미치는 영향에 관한 연구

최근 외식산업에서는 단순한 서비스 제공 공간이 아닌 브랜드를 강화하고 고객과의 관계성을 유지시키기 위한 외식복합문화공간으로 외식 플래그십스토어가 확산되고 있다. 외식 플래그십스토어는 고객의 경험을 극대화하여 브랜드와의 친밀 감과 연계성을 높여주는 공간이다. 본 연구는 선행연구를 바탕으로 해당공간에서의 고객경험으로 감정적, 감각적 그리고 관계적 경험을 도출했고, 감정적 몰입과 브랜드 충성도와의 영향관계를 확인했다. 연구 결과 고객경험요인은 브랜드에 대한 고객의 감정적 몰입에 영향을 주는 주요 요인으로 확인되었으며, 감정적 및 관계적 경험은 브랜드에 대한 직접적인 충성도에도 영향을 미치는 것으로 확인되었다. 또한, 브랜드에 대한 감정적 몰입은 브랜드 충성도에 긍정적 영향을 주는 주요요인으로 확인되었다. 연구 결과를 바탕으로 외식 기업의 브랜드 강화를 위한 시사점이 제시되었으며, 이는 향후 국내 외식 플래그십 스토어의 발전적인 방향을 제시하는데 공헌할 것으로 사료된다. In recent years, restaurant flagship stores as a multiplex cultural space have become more widespread. Restaurant flagship stores are spaces that can maximize customer experience, which in turn can solidify connection to the brand. This study analyzed the total customer experience in restaurant flagship stores, and constructed that analysis around emotion, sense, and related experiences. The study result has shown that customer experience is the main factor towards determining the customer’s affective commitment. The result has also shown that both emotion and related experiences have direct positive impacts on brand loyalty. Furthermore, the affective commitment to the brand positively affects the brand loyalty as a result. This study provides several strategic marketing suggestions related to brand loyalty concerning restaurant flagship stores.
Influencing Factors on Intention to Vaccinate Against COVID-19 in College Students

Purpose: This cross-sectional study aimed to identify factors affecting coronavirus disease 2019 (COVID-19) vaccination intention. Methods: For an anonymous online survey, recruitment notices were posted on an anonymous community by each university, and an online survey was conducted through online form from June to July 2021. COVID-19 knowledge and health-protective behavior were measured using a questionnaire based on previous literature and reflecting the Korea Centers for Disease Control and Prevention’s COVID-19 Response Guidelines. The psychological antecedents of vaccination were measured by 5C scale. Results: Two-hundred and ninety-four college students (women 67.3%) answered the survey; 179 (60.9%) reported that they would accept a COVID-19 vaccine. The mean scores for COVID-19 knowledge and health-protective behavior were 22.97±5.33 (out of 35) and 9.92±2.22 (out of 12), respectively. For the psychological antecedents of vaccination, the mean scores for confidence, collective responsibility, calculation, complacency, and constraints were 4.45 (±1.24), 5.61 (±1.09), 5.09 (±1.18), 2.42 (±1.11), and 2.37 (±1.19) out of 5 points, respectively. The confidence, calculation, and collective responsibility were associated with vaccination intention. Additionally, the top reason for those who were less prone to accept vaccination against COVID-19 was concern about vaccine safety. Conclusion: The higher the confidence in the vaccine and the higher the collective responsibility, the higher the vaccination intention. As it is a factor related to an individual’s perception of COVID-19 information, it is necessary to increase confidence in the vaccines through obtaining accurate information on the safety, effectiveness, and side effects of the COVID-19 vaccines and vaccination

Recently, the multi-screening of target materials has been made possible by the development of the surface plasmon resonance (SPR) imaging method. To adapt this method to biochemical analysis, the multi-patterning technology of protein microarrays is required. Among the different methods of fabricating protein microarrays, the microfluidic platform was selected due to its various advantages over other techniques. Microfluidic devices were designed and fabricated with polydimethylsiloxane (PDMS) by the replica molding method. These devices were designed to operate using only capillary force, without the need for additional flow control equipment. With these devices, multiple protein-patterned sensor surfaces were made, to support the two-dimensional detection of various protein-protein interactions with SPR. The fabrication technique of protein microarrays can be applied not only to SPR imaging, but also to other biochemical analyses.

<P> We have fabricated the Pixel-Isolated Liquid Crystal (PILC) mode using micro-supporting structures and anisotropic phase separation method. Since the cell gap is sustained by polymer walls and the phase separated polymer layer, this novel structure shows good electro-optic properties having stability against external mechanical distortion. The mechanical stability of this configuration against external forces like pressure and bending is confirmed to be useful for diverse flexible display applications.</P>

본 논문에서는 의료 영상 생성을 위한 Med-StyleGAN2를 제안한다. 생성적 적대 신경망은 이미지 생성에는 효과적이지만, 의료 영상 생성에는 한계점을 가지고 있다. 따라서 본 연구에서는 의료 영상 생성에 특화된 StyleGAN 기반 학습 모델을 제안한다. 이는 다양한 의료 영상 어플리케이션에 활용할 수 있으며, 생성된 의료 영상에 대한 정량적, 정성적 평가를 수행함으로써 의료 영상 생성 분야의 발전 가능성에 대해 연구한다.
