        새우젓을 이용한 돈육의 품질개선에 관한 연구

        본 연구는 우리들의 식생활에 단백질 공급원으로 주로 이용되고 있는 돼지고기를 보다 효율적으로 이용하기 위한 방법의 하나로 새우젓을 첨가하여 이때 일어나는 돼지고기의 품질향상효과를 조사한 것이다. 잘 숙성된 새우젓을 돼지고기에 첨가하여 4℃, 10℃, 20℃ 및 20℃에서 36시간 저장 후 4℃로 저장하면서 돼지고기의 연도변화, 보수력 및 cooking loss의 변화, 육색의 변화 그리고 근원섬유 단백질의 변화 등을 조사했다. 연도는 새우젓 처리함에 의해 개선되었는데 4℃보다는 10℃, 10℃보다는 20℃에 저장한 경우가 높게 나타났다. 가공 특성으로 중요한 보수력은 새우젓을 첨가한 경우 개선되었는데, 20℃보다 4℃에 저장한 경우가 높게 나타났다. Cooking loss도 보수력과 비슷한 경향을 보여 새우젓 처리한 것이 낮은 값을 나타내어 수분손실이 적었으며, 저장온도가 높을수록 cooking loss도 높게 나타났다. 육색은 새우젓 처리에 의해 저장 초기에는 개선되지만 시간이 경과함에 따라 어두운 색을 나타내어 육색을 나쁘게 하였다. 연도의 개선효과에 관여하는 근원섬유 단백질은 새우젓 첨가에 의해 분해되는데, 주로 고분자량의 단백질의 titin과 저분자량의 일부 단백질들이 분해되었다. 저장온도에 따라 그 분해의 정도는 달라서 titin-Ⅰ의 경우 4℃에서는 2일째, 10℃와 20℃의 저장에 있어서는 1일 후에 titin-Ⅱ로 분해되었다. 이상의 실험결과에서 새우젓이 돼지고기의 품질을 향상시키는 효과가 있으며 장기간 저장에 의한 육색의 저하는 개선시켜야 할 문제점으로 나타났다. This study was carried out to determine the effect of treating with salt-fermented shrimp on quality of pig meat. The treated pig meats were stored at 4℃, 10℃, 20℃ or 4℃ after placing 20℃ for 36 hours, respectively. Meat tenderness was improved more at 20℃ storage than at 10℃ and 4℃ storage. However, in water holding capacity, the meat stored at 4℃ was increased more than them of 10℃ and 20℃. Cooking loss was decreased more at 4℃ than the other storage temperatures. When meat color observed, it was good at the early stage of storage but went down to the worse gradually. According to the result of SDS-PAGE, myofibrillar proteins were degraded more after treated with salt-fermented shrimp than the control. Among them, titin-Ⅰ was especially degraded after 2 days at 4℃ storage even though it was degraded after 1 day at 10℃ and 20℃ storage. These results suggest that salt-fermented shrimps cause to improve the quality of pork meats by increasing the meat color, meat tenderness and water holding capacity at the early stage of storage.

        『드레드: 거대하고 우울한 늪지의 이야기』에 나타난 백인 온정주의

        This article argues that Harriet Beecher Stowe’s second anti-slavery novel Dred: A Tale of the Great Dismal Swamp shows the author’s self-reflection as a white advocate of abolitionism. This article focuses on the character of Edward Clayton, who has much in common with the author, thus making it possible for her to critically review her own status as she speaks for African American slaves. In the novel, there are two court trials involving African Americans. Clayton reveals white paternalism, and emphasizes the weakness of black people instead of crediting their bravery or integrity that they deserve. Clayton feels justified in merely “taking care of them,” instead of focusing on speaking of their anger and cause for resistance. In describing Clayton in these events, Stowe displays a critical distance between him and herself. Clayton’s transformation from a good white man to a real abolitionist begins when he meets with Dred, the slave insurrectionist, and runaway slaves in the swamp. After his experience in the swamp, he begins to embrace African American people as equals which becomes his realistic alternative to Dred’s insurrection and Milly’s pacifism. In the end, he can be said to have overcome and abandoned his white paternalistic tendencies, just as Stowe herself has.

        『노-노 보이』에 나타난 인종차별주의 비판: 성취와 한계

        Since its re-discovery in the mid-1970`s, No-No Boy by John Okada has been regarded as a representative work of Japanese-American literature. In this novel, the author depicts his hero, Ichiro, as a man standing in the middle between his mother`s fanatic Japanese nationalism and wholesale assimilation that the veterans stand for. He had answered in the negative to the questions asking for his loyalty to America, but now he regrets his choice and blames himself for that. Putting him in this stance, the author effectively shows the reader the devastating effect of racism on the Japanese-American community after the World War II. We can say that Ichiro grows mature and comes to understand people and community better during the course of the work and that he finds his place in the society overcoming his self-hatred. Still, he has yet to have a correct understanding that not he but the American government is to blame for his becoming a no-no boy, that he can be a good American without discarding his Japanese heritage. But he does not ask radical questions about America. Rather, as one critic says, Okada "resolves his character`s identity crisis through binary opposition valuing (white) American over Japanese." The major characters, Ichiro the no-no boy, the pro-American Emi, and the idealist Kenji, never consider other places than America as their place to live in. In that sense they are realists. They dream about the ideal America, which is contrasted to the present America, and at the same time they desire to be accepted as an American. Their ideal America is a society that does not exclude them for racial reasons. It seems that the author finds some reasons for hope. In that sense, this novel can be said to be "assimilationist" in the broad sense of the word. No-No Boy is the literary product of the times when it was extremely difficult to criticize the dominant culture`s contradictory attitude towards race, and to insist on their ethnic heritage. This causes some limitations of this work. But in spite of these limitations, it is a great work that shows the tragic effects of racial discrimination, anticipating stronger, more conscious voices of Asian-American writers after the 1970`s.

        『제철공장에서의 삶』 - 중산계급 여성 화자의 역할

          This paper analyses the role of the narrator in Life in the Iron Mills(1861). The class issue is very important in this novella, which is called the first work to deal with the working class in the American literary history. It is critical to understand the characteristics of this "middle-class" "female" narrator to get a better understanding of the issue. In this novella, the main narrative is the story of the two working class people, Hugh and Deborah. To tell readers the story, Davis created a narrator and a listener(or listeners) who are middle class people. Thanks to their presence and the story frame, readers are presented with the views and ideologies of middle or high class Americans about lower class people, as well as the miserable state of the working class in 1860"s.<BR>  The narrator is very critical and poignant in depicting high or middle class Americans when showing us what typical middle-class Americans say and how they act. This was possible because she was from the same class, which she was very familiar with. On the other hand, she has some limits in presenting working class people. The working class life is described only as dirty, ignorant and full of crimes. She doesn"t relate the working class life to positive traits like adherence to real life and the fulfilling of true value of labor. She presents labor as something to get over to live a meaningful life.<BR>  In the story the worker-artist Hugh Wolfe doesn"t seem to be a type of the working class but an exception of it. In some sense he is a projection of a female artist who is also unprivileged in the society. The author is sympathetic to him when she describes his despair as an artist. But she shows us him to be rather cold and unfeeling, in which he is contrasted with Deborah, the heroine. Davis seems to approve her power of sympathy and affection.<BR>  When showing Deborah"s emotions and values, the narrator reveals her middle class sensitivity. It is also notable that Davis created a realistic and healthy type of working class woman rather than conventional one, which is one of Davis"s great achievements.<BR>  In a sense, this story is not about the working class itself, but about the way in which the middle class people react to working class people. Davis is honest and realistic in that matter. She shows the middle class people as they are and that becomes her self-assessment. That is one of the reasons why Life in the Iron Mills is a great work.

        최근 기존의 차량 내부 네트워크의 한계점을 해결하고 운전자의 편의성을 증진할 뿐만 아니라 나아가 자율주행자동차 개발에 있어 핵심이 되는 기술로 차량 이더넷에 대한 연구가 활발히 진행 중이다. 자동차 산업계에서는 기존의 버스 토폴로지에 비해 차량 이더넷의 늘어난 대역폭으로 기존에 불가능했던 기능을 실현할 수 있을 것으로 전망하고 있다. 하지만 자동차에 이더넷을 적용하기 전에 차량 이더넷이 보안상 안전한지 검증할 필요가 있다. 본 논문에서는 최근 차량 이더넷 기술 및 보안 표준화 현황에 대하여 조사하였으며, 추가로 차량이더넷 환경에서의 보안기술 연구들을 3가지 카테고리로 분류하였다. 또한 차량 이더넷 환경에서의 갖춰야할 보안전략에 대하여 서술하였다. 차량 보안을 위해서는 이더넷 보안뿐만 아니라 차량의 개발단계에서부터 보안을 고려한 설계를 하고 부품별 특화된 보안기술 적용 및 주행 시의 발생된 트래픽 분석을 위한 환경까지 차량 전반에 걸친 보안 기술이 필요함을 제시하였다.
