국내의 식물성 식품 시장이 빠르게 성장하고 있음에도 불구하고 국내 소비자의 시장에 대한 인식은 여전히 낮고 국내 소비자를 대상으로 한 연구 또한 미흡한 실정이다. 본 연구는 식물성 대체 식품에 대한 소비자의 기호와 인식을 다양한 측면을 종합적으로 살펴보고자 하였다. 특히 식물성 버거 패티의 수용도에 있어 암묵적 및 명시적 참조 프레임, 버터와 치즈 제품에 대한 국가별 선호도 차이, 식물성 초콜릿 음료에 대한 소비자 수용과 인식 형성에 있어 정보 노출, 반복 노출, 선택 행동의 역할에 초점을 맞춰 연구를 진행하였다.
첫 번째 연구에서는 암시적 참조 프레임과 명시적 참조 프레임이 식물성 버거 패티에 대한 소비자의 기호와 인식에 미치는 영향을 조사하였다. 암시적 프레임으로는 기준 시료와 함께 평가하는 시료의 구성을 다르게 하여 조절하였으며, 명시적 프레임으로는 식품의 동물 복지적인 측면이나 친환경적인 내용을 다룬 정보의 제공 유무로 조절하였다. 연구 결과, 명시적 프레임의 조절은 식물성 버거 패티의 기호에 영향을 미치지 못했으나 함께 평가하는 시료의 구성은 기호에 큰 영향을 미치는 것으로 나타났으며, 특히 동물성 시료보다 식물성 시료와 함께 평가할 경우 기호도가 안정적이었다. 소비자들은 식물성 육류 대체제의 품질과 맛에 대한 기대치가 매우 낮기 때문에 단 한 번의 명시적 정보로는 제품 기호도를 긍정적으로 변화시키지 못했다. 식물성 버거 패티의 수용도를 높이기 위해서는 기존 제품의 대안이나 대체재가 아닌 비건 제품의 한 종류라는 점을 맥락적으로 강조해야 할 것이다.
식물성 초콜릿 음료를 대상으로 한 두 번째 연구에서는 반복 노출, 식품 및 지속가능성에 관한 교육, 선택 행동이 소비자의 기호도와 인식에 어떤 영향을 미치는지 조사하였다. 연구 결과, 식물성 제품에 대한 정보를 제공함으로써 건강, 환경 친화성, 동물 복지에 대한 인식이 긍정적으로 개선될 수 있는 것으로 나타났다. 또한, 소비자에게 식품과 지속가능성에 대한 교육을 반복적으로 제공하면, 환경 친화적이고 윤리적인 선택 옵션에 대한 인식이 긍정적으로 변화할 수 있음을 확인하였다. 소비자가 평가할 제품을 직접 선택할 때 기호도가 높아지는 '소유 효과'도 확인되었다. 소비자들이 식물성 대체제를 선택하도록 유도한다면 제품 만족도가 상승하여 꾸준한 선택으로 이어질 수 있을 것이다.
세 번째 연구에서는 덴마크 및 국내 소비자를 대상으로 동물성 및 식물성 버터와 치즈의 기호도와 인식에 영향을 미치는 태도를 조사하였다. 연구 결과, 친숙함이 소비자의 제품 기호도에 가장 큰 영향을 미치는 것으로 나타났으며 환경 친화적인 태도를 가진 소비자들은 상대적으로 식물성 제품의 기호도가 높았다. 한국 소비자들은 국내산 치즈를 건강하다고 인식하였는데, 이는 마케팅 전략의 영향이 있다는 것을 시사하였다. 또한 양국의 소비자들은 동물 복지와 친환경 측면에서 식물성 제품을 긍정적으로 인식하나, 윤리적, 환경적 문제에 관심이 더 높은 덴마크 소비자가 이러한 이슈에 더 민감하게 반응하였다. 이 연구는 제품 기호도 형성에 있어 소비자의 태도와 감각적 경험이 중요하며, 문화에 맞는 맞춤형 제품 개발과 마케팅 전략의 중요성을 강조한다.
이러한 세 가지 연구의 결과는 소비자의 인식과 선택에 영향을 미치는 복잡한 요소들을 밝혀내며, 소비자의 선호 가치에 맞춰 제품 개발과 마케팅 전략을 조정하는 것의 중요성을 강조한다. 본 논문은 지속 가능한 소비를 위해 다양한 식물성 식품 분류에서 소비자의 선택과 긍정적인 인식을 이끌어내는 요소에 대한 미래 연구의 기반을 마련할 것이다.

Despite the rapid growth of the plant-based food market in South Korea, consumer awareness remains low and research targeting domestic consumers is inadequate. This study comprehensively examines various aspects of consumer liking and perception of plant-based food alternatives. In particular, it focuses on implicit and explicit frames of reference in the acceptance of plant-based burger patties, differences in preferences for butter and cheese products across nations, and the intricate role of information exposure, repeated consumption, and choice behavior in shaping consumer acceptance and perceptions of plant-based chocolate beverages.
The first study evaluated a set of different types of samples in an implicit frame and a target sample with and without information provided in an explicit frame to investigate the impact of implicit and explicit frames on consumer acceptance and perception of vegan burger patties. Findings showed that sample types evaluated together had a greater impact on target sample liking and perception than the information provided explicitly. It was also found that it is very difficult to positively change product favorability with one-time explicit information, as consumers have very low expectations for the quality and taste of meat alternatives. The implicit condition, on the other hand, had an obvious impact on the liking and perception of vegan foods. Specifically, depending on the other samples evaluated together, the overall liking and familiarity ratings of the target sample changed significantly. These findings suggest that the acceptance of vegan burgers should be increased by emphasizing that these are a type of vegan product, not an alternative or substitute for existing products.
The second study, using a plant-based chocolate drink as a sample, sought to determine the effects of information exposure, repeated consumption, food and sustainability education and choice behavior on consumer liking and perceptions. The results showed that perceptions of health, environmental friendliness and animal welfare can be positively changed by providing information about plant-based products. Repeatedly educating consumers about food and sustainability helped to change their liking towards more environmentally friendly and ethically sound options. There was also an endowment effect, whereby consumers' liking of a product increased when they chose to evaluate it themselves. These findings show that encouraging consumers to choose plant-based alternatives from the outset can increase product satisfaction and long-term product loyalty. It will further enrich our understanding of sustainable food choice and broaden the scope of sustainable consumption by exploring whether these findings can be generalized to other food categories and different consumer groups.
In the third study, attitudes that influence consumer liking and perceptions were investigated and compared across cultures using plant-based butter and cheese as samples. The results showed that familiarity in particular is a key determinant of consumer acceptance. Perceived differences between animal and plant-based butters were evident, with consumers with strong environmental attitudes preferring plant-based alternatives. On the other hand, the differentiation of cheese products seemed to be more influenced by familiarity. Korean consumers perceived domestically produced cheese as healthier, which may be related to the marketing strategy that emphasizes the calcium content of sliced cheese in the Korean market. In addition, consumers in both countries recognized the benefits of plant-based products in terms of animal welfare and environmental friendliness, although Danish consumers were more sensitive to these issues due to their heightened concern for ethical and environmental issues. In conclusion, this study highlights the importance of consumer attitudes and sensory experiences in shaping product preference. It demonstrates that to effectively address diverse consumer needs and values, tailored and culturally appropriate strategies for product design and marketing are required. These findings uncover the intricate factors influencing consumer perceptions and choices, stressing the importance of adjusting product development and marketing strategies to align with diverse consumer acceptance and values. This study lays the groundwork for future research targeting various plant-based food categories and consumer groups, exploring specific elements driving consumer choices and perceptions and contributing to a comprehensive understanding of sustainable consumption.
