This study investigates the effects of lactic acid bacteria (LAB) fermentation on the sensory and chemical properties of Robusta coffee. Eighteen coffee samples were prepared by varying fermentation times (0, 6, 12, 24, 36 hours) and LAB strains (Pediococcus acidilactici HW01, Leuconostoc citreum HW02, Lacticaseibacillus rhamnosus GG). The electronic tongue analysis revealed increased sourness and astringency, alongside decreased bitterness and sweetness in fermented coffee. Sourness was attributed to reduced pH caused by lactic and organic acids, while bitterness reduction was attributed to the reduction in trigonelline content. Chlorogenic acid content increased significantly due to microbial enzyme activity and thermal processing during sterilization. Furthermore, volatile compound analysis showed elevated levels of furans, enhancing coffee’s aroma. Sensory evaluation highlighted improved consumer preference for short-term fermentation (Lc6H), suggesting optimal conditions for balancing flavor. These findings provide valuable insights into optimizing fermentation and processing techniques to improve Robusta coffee’s market potential.
