The variation of the yields of cheese according to the addition of proteins, double pasteurization, homogenization and concentration was studied.
The addition of 2-8% skimmed milk powder to the raw milk brought about 3-4% yields increase and more than 8% skimmed milk powder gave the product milk powder taste.
The addition of 0.2-0.8% Ca-caseinate or Na-caseinate to the raw milk brought about 1-2% yields increase. The addition of Ca-caseinate brought about 0.5% higher yields increase than that by the addition of Na-caseinate.
Double pasteurization of milk increased the yields compared with single pasteurization. Double pasteuri zation at 75℃ followed by 16 hours setting showed the highest product yields of about 3%.
Homogenization and concentration brought about 1.2-1.8% yields increase.
