The purpose of this study was (1) to understand the effects of Home Economics classes in middle school on the students’ perception of nutrition labels and on their choice of processed food and (2) to show the importance of including education on nutrition labels in the school curriculum. We picked 460 subjects (3rd graders including both genders) randomly from two middle schools in Seoulone (School A) has nutrition-label-education embedded curriculum, while the other (School B) doesn’t have it. We distributed questionnaires and got them back from September 17th to 21st in 2007. The questionnaire was mainly about how many products students purchase, how much they know about nutrition facts, how often they use their knowledge about nutrition facts when buying food, or how much they are satisfied with their knowledge and so on. The information collected was analyzed by SPSS 14.0 program.
Below is the summary of the study.
First, ‘Ramyon’ was the most popular food for students, and the reason why they buy Ramyon most was because of their preference of its ‘taste’.
Second, students from School A were better informed about nutrition labels than those from School B. The former learned the information from ‘classes in school’, whereas the latter got the information from ‘TV or the Internet’. Most of the students were aware of the necessity for including nutrition label education in the school curriculum because they think the information would be practical by helping them to choose better products for their health. They also answered that ‘Technology and Home Economics’ is the most appropriate subject in which class they think the nutrition labels should be taught; ‘1st grade in middle school’ was thought to be the best time to learn about nutrition and nutrients according to the survey. Some students who didn’t show any need for the curriculum said they can understand nutrition labels on the foods without extra classes.
Third, even though most students ‘rarely check’ nutrition labels when they buy food, those who learned about nutrition labels checked and applied them more than those who didn’t.
Fourth, students who had learned about nutrition labels showed a higher level of recognition and application of the information, and they were more satisfied with their knowledge than those who had not. In the same respect, students in School A, whose curriculum had information about nutrition labels, were better informed and more satisfied than those in School B, whose curriculum had no such information. Those who showed the need for nutrition education and girls had a higher level of recognition and application of the information, and they were more satisfied with their knowledge than those who didn’t show any need and boys, respectively.
According to the above study, we need to put an emphasis on constant and systematic education about students’ health and proper diet, so that they can make rational decisions when they buy food, considering the nutrition of the food as well as its taste. We also need to make sure students get correct information about nutrition labels from TV or the Internet and not be deluded by a false bluff. In addition, we should develop practical teaching-learning methods to help students to actively apply nutrition labels in the real life situation. More emphasis on educating boys is needed since they showed a low level of recognition and application of the information; teaching nutrition labels when students are young is considered to be necessary, so that they can understand the information on the packages of the products and learn how to choose better products for their health. Consequently, enough and correct information about nutrition labels must be presented in the school curriculum of Home Economics.
