A purpose of this study is to provide the fundamental data of nutrition education contributing to a formation of balanced and health oriented dietary habit by expanding opportunity in encountering a variety of rice foods and developing and succeeding food culture with rice to the students after investigate and analyze perception of actual status of rice food intake, preference and perception of rice toward 452 middle school students, 227 male students (50.2%), 225 female students(49.8%).
The majority preferred to rice food, a reason of preferring to rice is that it is staple food we eat everyday. Food in place of rice was noodles and bread, the male students preferred to noddles more than the female. 65.3% of students responded that they frequently eat rice snacks, the rice snacks taken often are tteok-bokki and tteok-kkochigui, the next rice snacks are rice ckae, rice beverage, rick cookies. A reason that they do not eat rice snacks is inexperience in rice snack and untasty food.
In intake frequency of rice food, the rice was the highest and the next foods are rice with multi grains, tteok-bokki, fried rice, kimbab, rice cake, rice noodles, shik-hye, rice cake soup, rice gruel, gukbap, rice cookies, misutgaru, popping rice, haetban, rice beverage, and rice syrup. Aside from cooked rice, bread and cookies made of flour is higher than rice food in intake frequency.
In preference of cooked rice out of rice foods, cooked rice was the highest and rice with multi grains and glutinous rice comparatively showed the low preference. In a-la-carte menu, kimbap, cho-bab, fried rice with shrimp, omurice, bibimbap, and rice cake soup were shown in order of preference, and kongnamul-bap showed the low preference. In rice gruel, preference of chicken gruel was the highest and pine nut gruel showed the low preference. In instant food, triangular kimbap was the highest and haetban was the lowest. In rice cake, injeolmee, backsulki, mujigaetteok and songpyeon were the highest and hobaktteok, assorted rice cake and kongtteok were the lowest preference. In snacks, tteokbokk, tteokkkochi, popping rice, rice cookies and han-gwa were shown in order of preference. In beverage, sikhye, misutgaru and rice beverage were in order of preference.
In the level of nutrition knowledge about rice, the female students showed 6.39 point out of 10 and the male students showed 6.22 point. TV was the highest in media they acquire nutrition knowledge, the next media was school education, friend, relative and Internet.
In a reason of decrease in rice consumption, an increase of fast food intake was the highest, the next reasons were the increase in meat consumption, sensational weight loss, and troublesome of taking a meal with rice. In necessity of rice intake, most of them responded that it is better to eat. Regarding rice centered traditional dietary life, the majority responded that it should be succeeded and developed and its reason is superior nutrition, unique traditional dietary life and suitability for taste. In a solution to increase rice consumption, 54.2% of the students responded that producing a variety of rice foods is necessary and 14.4% of the students responded that education and public relation for superior nutrition is necessary,
In view of the results, unlike a high preference of rice food of middle school students, intake frequency of rice gruel, rick cake, rice cookies and rice beverage was lower than flour, bread and cookies, so it was found that a degree of using rice food was lower than flour, bread and cookies. Accordingly, if a specialty store where rice food is easily contacted and rice food is developed is revitalized, rice consumption will be increased.
As the middle school students are in the time of change in preference of food and dietary habit, in order to raise preference of rice food, it is necessary to educate and promote superiority of rice and the program development that inspires perception of rice centered dietary life is necessary. Considering a limitation that the study targeted male and female students in some areas of Geyonggi-do, in the further study, the study with many target students is necessary.
