        Current prospects of mushroom production and industrial growth in India

        The global mushroom industry has grown rapidly in recent years in terms of beneficial effects, market value, and demand. India has a wide range of agro-climatic conditions and is largely an agricultural country with a cultivated area of about 4.37 %, generating about 620 million tons of agro waste annually. Mushroom cultivation not only helps recycle agro wastes, but also fills the nutritional gap prevalent among a large population of India. Recently, government industrial policy and creative innovation has promoted research and other endeavors aiming towards the cultivation of mushrooms. Mushroom cultivation in India was initiated in Solan, in the mid-sixties. Mushroom cultivation has been successful in temperate regions of the Himalayas, the Western Ghats, and the hills of northeast India. Recently, many unemployed people have begun to adopt mushroom cultivation as a means of self-employment. It is high time that Indian mushroom cultivators and consumers became aware of the nutritional and medicinal values of cultivated and wild species of mushrooms. The total mushroom production in India between 2010 and 2017 was approximately 0.13 million tons, accounting for a 4.3% increase in the average growth rate of mushrooms per annum. In particular, the total production of white button mushrooms is the highest, with a share of about 73% of total mushroom production. In this review article, we have analyzed the current scenario of the Indian mushroom industry and its contribution to the economic growth of the country.

        Cellulase from the fruiting bodies and mycelia of edible mushrooms: A review

        Cellulose is the most abundant organic polymer constituent of the cell wall of green plants and of various forms of algae. The complexity of lignocellulosic biomass is a major challenge in industrial research. Most mushroom species that naturally grow on soil or wood possess cellulases and the corresponding enzymatic system and, potential candidates for the direct bioconversion of softwood polysaccharides into fermentable sugars. However, there have been fewer studies on mushroom cellulases than on fungi such as Trichoderma spp., exploit the full potential of mushroom cellulases. This review will focus on the current status ofmushroom cellulase research and applications and will provide insight into promising future prospects.

        Fungal and mushroom hydrophobins: A review

        Hydrophobins are surface active proteins that are produced by filamentous fungi including mushrooms. Their ability to self-assemble into an amphipathic membrane at any hydrophilic-hydrophobic interface is most intriguing. These small secreted proteins comprise of eight conserved cysteine residues which form four disulfide bridges and an extraordinary hydrophobic patch. Hydrophobins play critical roles in fungal (and/or mushrooms) growth as structural components and in the interaction of fungi and mushrooms with the environment. The biophysical and biochemical properties of the isolated proteins are remarkable, such as strong adhesion, high surface activity and the formation of various self-assembled structures. With the increasing demands of hydrophobins from fungi and mushroom sources, production and purification in large scale is under challenge. Various applications, ranging from food industries, cosmetics, nanotechnology, biosensors and electrodes, to biomaterials and pharmaceuticals are emerging and a bright future is foreseen.

        Characteristics and suitability of various cereal grains in spawn production of button mushroom

        Spawn is the vegetative growth of the mycelium and serves as the inoculum or seed for cultivating mushrooms. Various cereal grains, such as wheat, millet, barley, sorghum, brown rice, rye, and oat were assessed to compare their characteristics and suitability for spawn production of button mushroom (Agaricus bisporus). The mycelial growth rates, density, and the number of completely colonized grains were measured from the twentieth day of inoculation. Wheat grains showed fastest mycelial growth with 8.4 cm followed by rye, oat, barley with 8.2, 7.5 and 7.3 cm, respectively. In the mycelial density, foxtail millet, barley, and sorghum were best compared with that of wheat grains. Especially, the number of grains which were completely colonized by mycelia were greatest in foxtail millet with 5,123 grains followed by proso millet, and wheat with 3,052 and 914, respectively. Based on the results obtained, barley, foxtail millet, and sorghum grains would be appropriate substituting for wheat grain in spawn production of button mushroom.

        Thermophile mushroom cultivation in Cambodia: Spawn production and development of a new substrate, acacia tree sawdust

        이 연구는, 느타리버섯과 풀버섯만 재배하던 캄보디아에서 영지버섯, 목이버섯 그리고 표고버섯 등과 같은 여러 종류의 고온성 버섯들의 종균을 생산하고, 캄보디아에서 생산되는 경제적이고 효율적인 새로운 버섯배지를 찾기 위해 시도되었다. 종균 및 버섯재배 배지로, 여러 종류의 유기물찌꺼기, 곡물, 그리고 톱밥이 사용되었다. 고무나무 톱밥배지에서 자란 균사 (10.9 cm/15일)는 곡물배지에서 자란 균사 (11.2 cm/15일)에 비해 성장이 조금 느렸지만, 고무나무 톱밥은 낮은 가격 및 취급의 용이성이 있어, 비싼 곡물종균을 대치할 수 있는 매우 적절한 배지인 것으로 나타났다. 버섯생산을 위해서, 고무나무톱밥(60.8% BE), 사탕수수박(60% BE), 그리고 아카시아나무 톱밥 등에 미강과 탄산칼슘을 혼합하여 사용하였는데, 사탕수수박과 고무나무 톱밥은 매우 비슷한 높은 생물학적 효율(BE)을 보여주었고, 아카시아나무 톱밥은 비교적 낮은 22.4%의 생물학적 효율을 보여주었다. 따라서 낮은 가격에 구입할 수 있는 아카시아톱밥이 현재 사용되고 있는 높은 가격의 배지들과 혼합하여 사용된다면 매우 가능성이 높은 새로운 배지가 될 수 있을 것으로 보였다. 현재, 사용되고 있는 톱밥의 가격 (20 kg 고무나무톱밥=6500 Riel 혹은 1.6 USD)과 비교했을 때, 아카시아톱밥의 가격(20 kg=1000Riel 혹은 0.25USD)이 매우 낮아 버섯의 생산에 투자되는 비용을 크게 줄여 경제성을 높일 수 있을 것으로 사료된다. To minimize cultivation costs, prevent insect-pest infestation, and improve the production efficiency of thermophilic mushrooms, plant substrates obtained from local areas in Cambodia were used for production of both spawn and mushrooms. In this experiment, different sawdusts different organic wastes and grain ingredients and analyzed for improvement of spawn-production efficiency. Four thermophilic mushroom species, Pleurotus sajor-caju (oyster mushroom, Sambok), Ganoderma lucidum (deer horn shaped), Auricularia auricula (ear mushroom), and Lentinula edodes (shiitake), were used to identify efficient new substrates for spawn and mushroom production. Although the mycelia in the rubber tree sawdust medium showed a slightly slower growth rate (10.9 cm/15 days) than mycelia grown in grains (11.2 cm/15 days in rice seeds), rubber tree sawdust appeared to be an adequate replacement for grain spawn substrates. Th findings indicate that rubber tree sawdust, sugarcane bagasse, and acacia tree sawdust supplemented with rice bran and calcium carbonate could be new alternative the substrates for. Although sugarcane bagasse and rubber tree sawdust showed similarly high biological efficiencies (BE) of 60% and 60.8%, respectively, acacia tree sawdust exhibited relatively a low biological efficiency of 22.4%. However, it is expected that acacia sawdust has potential for the mushroom cultivation when supplemented with currently used sawdust substrates in Cambodia, because of its relatively low price. The price of the sawdust (20 kg sawdust= 6500 Riel or 1.6 USD) currently used was 6.5 times higher than the price of acacia sawdust (201000 Riel or 0.25 USD). Therefore, utilization for acacia sawdust for mushroom cultivation could become feasible as it would reduce by producing costs of mushrooms in rural areas of Cambodia.

        In vitro antioxidant, anti-hyperglycemic, anti-cholinesterase, and inhibition of nitric oxide production activities of methanol and hot water extracts of Russula rosacea mushroom

        Russula rosacea, a mycorrhizal fungus, has been used for edible and medicinal purposes. This study was conducted to evaluate the in vitro antioxidant, anti-hyperglycemic, anti-cholinesterase, and nitric oxide inhibitory effects of the fruiting bodies from R. rosacea extracted with methanol, and hot water. The 1,1-diphenyl-2-picryl hydrazyl (DPPH) radical scavenging activities of the methanol and hot water extracts (2.0 mg/ml) of R. rosacea were comparable with BHT, the positive control. The chelating effects of the mushroom and hot water extracts were significantly higher than that of BHT. The reducing power of methanol and hot water extract (6 mg/ml) were significantly lower than that of BHT. Seven phenolic compounds were detected from acetonitrile and hydrochloric acid solvent extract of the mushroom. alpha-amylase and alpha-glucosidase inhibitory activities of methanol and hot water extracts were lower than that of acarbose, the positive control. The acetylcholinesterase and butyrylcholinesterase inhibitory effects were moderate compared with galanthamine, the standard drug. Nitric oxide (NO) production in lipopolysaccharide (LPS) induced RAW 264.7 cells were inhibited significantly by the mushroom extracts in a concentration dependent manner. Therefore, we demonstrated that fruiting bodies of R. rosacea possess in vitro antioxidant, anti-hyperglycemic, anti-cholinesterase, and NO production inhibitory activities. The experimental results suggest that the fruiting bodies of R. rosacea are good natural antioxidant, anti-hyperglycemic, anti-cholinesterase, and anti-inflammatory sources.

        Antioxidant activity of partially characterized polysaccharides from the edible mushroom Pleurotus djamor var. roseus

        버섯 다당류는 면역 조절 기능, 항암 및 항산화 활성을 비롯하여 항바이러스 활성과 방사선스트레스의 경감등 인체에 유익한 다양한 생리활성을 나타낸다. 본 연구에서는 분홍느타리버섯 (Pleurotus djamor var. roseus Corner)으로부터 뜨거운 물과 에탄올 침전을 이용하여 5.6%의 수율로 갈색을 띠는 경화된 다당류(CPs)를 순차적으로 추출하였다. 이렇게 추출된 CP는 Diethylaminoethyl cellulose(DEAE) 및 sepharose-6B 컬럼 분리를 통해 4개의 분획을 얻었고 각 분획의 총 글루칸 함량은 각각 76.85%, 2.95%, 75.08%, 1.46%로 밝혀졌다. 이중 가장 높은 수율의 분획(PP)으로부터 300 mg의 백색 분말이 얻어 졌으며, 박층 크로마토그래피(TLC)와 푸리에 변환 적외선 분광법(FTIR)의 결과로부터 자일로펜토스 유형의 화합물과 함께 다당류 부분의 존재를 확인하였다. PP의 항산화 활성은 1,1-diphenyl-2-picryl-hydrazyl(DPPH) 자유라디칼 소거 분석 및 슈퍼옥사이드 라디칼 소거 분석을 통하여 높은 활성을 나타냄을 확인하였다. PP분획에는 페놀, 단백질 및 단순 탄수화물이 없는 정제된 베타글루칸이 주 구성성분으로, 정제된 다당류가 천연 항산화제로 사용될 수 있음을 알 수 있었다. Mushroom-derived polysaccharides, which are the primary bioactive constituents, are beneficial for human health. Polysaccharides have immuno-modulation, antitumor, and antioxidant properties. Additionally, they have antiviral properties and protect against chronic radiation stress. In this study, high yield water-soluble polysaccharides were obtained from Pleurotus djamor var. roseus basidiocarps. The crude polysaccharide (CP) was extracted sequentially by hot water and ethanol precipitation. The yield of the brown CPs was 5.6% dw. Diethylaminoethyl cellulose and Sepharose-6B column chromatography of CPs generated several fractions. Total glucan content was determined in all the fractions. The F1 fraction displayed the highest sugar content and was considered as a purified polysaccharide (PP). The total glucan and β-glucan content in the four fractions ranged between 76.85-2.95% and 75.08-1.46%, respectively. The yield of the PPs was 300 mg, and it was obtained as a white powder. The PPs were characterized by Fourier-transform infrared spectroscopy (FTIR) and thin-layer chromatography. The FTIR spectral details confirmed the presence of a xylopentose polysaccharide. The antioxidant activity of the PPs was evaluated using in vitro 1,1-diphenyl-2-picryl-hydrazyl (DPPH) free radical scavenging assay and superoxide radical scavenging assay. The PPs showed strong DPPH free radical and superoxide anion radical scavenging activities in a dose-dependent manner. Purified PPs free of phenolics, protein, and carbohydrates were mainly responsible for the radical scavenging activity. The data suggest the potential of PPs as natural antioxidants.

        Introduction of the representative mushroom cultivars and groundbreaking cultivation techniques in Korea

        The production scale of mushrooms in Korea is approximately 600 billion won, which is 1.6% of Korea's gross agricultural output. In Korea, ca. 190,000 tons of mushrooms are harvested annually. Although the numbers of mushroom farms and cultivators are constantly decreasing, total mushroom yields are increasing owing to large-scale cultivation facilities and automation. The recent expansion of the well-being trend has caused an increase in mushroom consumption in Korea: the annual per capita mushroom was 3.9 kg ('13), whichis a little higher than that in Europe. Thus, mushroom export, mainly Flammulina velutipes and Pleurotus ostreatus, has increased since the mid-2000s. Recently, however, it is slightly reduced. Nevertheless, Vietnam, Hong Kong, the United States, and the Netherlands continue to export mushrooms, and Korea has increased its export to Australia, Canada, Southeast Asia, etc. Canned Agaricus bisporus, the first export of the Korean mushroom industry, reached it speak sales in 1977-1978. When Korea initiated trade with China in 1980, the international prices of mushrooms fell sharply, leading to shrinkage of the domestic markets. Spurred by the high demand to develop substitute goods for A. bisporus, the oyster mushroom (P. ostreatus) gained attention since it seemed to suit the taste of Korean consumers. Although the log cultivation technique for oyster mushroom was developed in the early 1970s, it required a great deal of labor. Thus, we developed the shelf cultivation technique, which is easier to manage and allows for mass production. In this technique, the growing shelf is made mafrom fermented rice straw, whichis the only P. ostreatus medium in the world and isused only in South Korea. After then, the use of cotton wastes as an additional material of medium, the productivity. Currently, we are developing a standard cultivation technique and environmental control system that can stably produce mushrooms throughout the year. The increase of oyster mushroom production may boostthe domestic market and contribute to industrial development. In addition, oyster mushroom production technology played a role in forming the basis for the development of bottle cultivation, which made mass production. In particular, bottle cultivation using liquid spawn could allow for the export of F. velutipes and Pleurotus eryngii. In addition, the white varieties of F. velutipes were second developed in the world after Japan. We also developed the new A. bisporus cultivar 'Saeah', which is easy to grow in Korea. In hopes to advance the mushroom industry, we will continue to develop cultivars with international competitive power and to improve cultivation techniques.

        Plant-growth promoting traits of bacterial strains isolated from button mushroom (Agaricus bisporus) media

        A diverse group of plant-growth promoting bacteria were isolated in button mushroom (Agaricus bisporus) media to investigate the plant-growth promoting traits of compounds including indole acetic acid (IAA), ammonia, 1-aminocyclopropane-1-carboxylic acid deaminase, siderophore, and hydrogen cyanide. Twenty-one bacterial strains showing positive effects for all the test traits were selected and classified to confirm bacterial diversity in the media habitat. Plant-growth promoting traits of the isolates were also assessed. All strains produced IAA ranging from 20 ㎍/mL to 250 ㎍/mL. Most of the isolates produced more than 80% siderophore. Four strains (Pantoea sp., PSB-08, Bacillus sp., PSB-13, Pseudomonas sp., PSB-17, and Enterobacter sp., PSB-21) showed outstanding performances for all the tested traits. In a bioassay of these four strains using mung bean plant, the best growth performances (23.16 cm, 22.98 cm, 2.27 g/plant, and 1.83 g/plant for shoot length, root length, shoot dry weight, and root dry weight, respectively) were obtained from the plants co-inoculated with Bacillus sp., PSB-13. The resultant data indicate that button mushroom media have got a diverse group of bacteria with plant growth promoting abilities. Thus, the media could be a good recycling resource for using to an effective bio-fertilizer.

        Properties of disease occurrence by season for cultivation facilities of oyster mushroom

        We investigated the correlation between density of air and the infection rate of airborne microorganisms in mushroom cultivation facilities and found that the correlation was low in places where the infection rate during cultivation was less than 1%. The farms with an infection rate of 2~5% showed a high infection rate in the inoculation room in spring and summer seasons, and in the incubation room in autumn, and the farms with an infection rate of more than 6% showed infection in all the rooms regardless of the season. The farms where the Trichoderma sp. was investigated at the time of the mushroom cultivation showed the highest infection rates of 3.17%, 2.74%, and 2.64% in summer, spring, and autumn, respectively. The farms infected with Neurospora tetrasperma showed a lesser rate of infection than the ones infected with Trichoderma sp., and the highest infection rate of 0.56% was observed in summer. Based on these results, the type of infection could be classified into five groups, where type I was farms where the infection rate is less than 1% in all seasons. Three farms belonged to this type, and the infection rate in this type was lower than that in the other types.
