This study was conducted to investigate the effects of chitin incubated solution (CIS) and bordeaux mixture (BDM) on soil chemical properties, scab occurrence, and fruit quality of ``Niitaka`` pear (Pyrus pyriforia) in an organic orchard. Organic orchard systems increased organic matters, Ca and Mg concentrations in soils compared to the conventional orchard. Conventional cultivation system reduced the scab occurrence but the organic systems did not. Organic cultivation system significantly increased the stone cells in the flesh part of pear fruits, which organically treated-fruits had more than 3% of the stone cells. Organic cultivation system resulted in increasing partly fruit firmness compared to the conventional fruits. BDM treatment increased fruit soluble solids and dark red color on the fruit surface, but caused the fruit surface staining at the harvest stage.
