In fermented mash which was used rice and sweet potato as source material, the contents of alcohol, total sugar, total organic acids were analyzed and the results are summarized as follow. 1). Rice-fermented mash having higher starch content(81%) was more on the average 4% in alcohol fermentation than sweet potato-fermented mash having lower starch content(21%). 2). Total sugar content of sweet potato-fermented mash was more on the average 21% than rice-fermented mash because of the larger amount of the non-reducing sugar which can't be used in alcohol fermentation. 3). In sweet potato-fermented mash, the total content of the organic acids was on the average 1.1% more than rice-fermented mash because of the larger amounts of acid-forming materials. 4). From above results. It was not probitable to make fermented mash from sweet potatos and it is thought that it should be made from pure sweet potato starch.
