영양교육 교수-학습 지도안 개발에 관한 연구 : 초등학생을 대상으로

국문 초록 (Abstract)

학령기는 인간의 발달과정 중 성장 발육이 왕성하여 영양소 요구량이 증가함과 동시에 식습관이 형성되어가는 시기이며, 이 시기의 식품에 대한 경험이 성인이 되어서까지 식품섭취와 관련된 식품기호 및 식사행동을 형성하는데 중요한 역할을 한다. 그러나 최근 급격한 산업화와 더불어 여성의 사회참여가 증가되고 그에 따라 가공식품의 남용, 외식의 증가 등 식문화와 식행동의 변화로 아동의 결식, 영양결손, 영양방임, 영양과잉, 편식 등의 새로운 문제가 대두되고 있다. 따라서 성장기 아동에게 필요한 영양을 공급하고 영양교육을 함으로써, 심신의 발달과 편식 교정, 올바른 식습관을 어려서부터 형성하도록 하는 것이 매우 중요하다. 학령기 때부터 반복적이고 체계적인 교육이 이루어지려면 초등학교에서의 영양교육이 무엇보다 중요하다. 최근 들어 영양교육의 중요성이 인식됨에 따라 국내에서도 영양교육을 위한 시청각 자료와 프로그램들이 개발 및 실시되어 그 효과가 평가되고 있으나 초등학교 영양교육의 모델을 제시하기에는 아직 부족한 실정이다. 게다가 2007년부터 영양교사 제도가 시행되어 학교현장에 영양교사가 배치되었으나 영양교육 시간이 별도로 배정되어 있지 않고, 교과서는 물론 교육 자료나 교육방향 조차 제시되지 못하여 큰 혼란을 겪고 있다. 이러한 학교현장의 상황을 고려하여 본 연구는 제7차 교육과정 안에서 일반교과와 연계하여 영양교육을 실시함에 있어 손쉽고 체계적으로 교수-학습 지도안을 개발 할 수 있도록 자료를 제공하려는 목적으로 수행하였다. 이러한 연구의 목적을 달성하기 위해서 관련 이론을 고찰한 뒤에 실증 연구방법으로서 현행 초등학교 전 학년의 교과서를 내용분석 한 후 이를 근거로 영양교육 목표와 내용을 분류하고 매체를 제시하였다. 초등학생을 위한 영양교육 교수-학습 지도안 개발 과정은 다음과 같다. 첫째, 선행연구를 통해 초등학교 영양교육의 내용을 영양이론, 식생활 태도, 식생활 기능, 식품생산, 전통식문화의 5가지 영역으로 나누고 개념을 정의 하였다. 둘째, 현행 초등학교 교과서의 영양교육 관련 내용을 발췌한 후 영역별로 나누어 분석하였다. 셋째, 영양교육의 각 영역마다 학습 목표를 세우고 내용을 선정하였으며, 그에 맞는 교육매체를 제시하였다. 넷째, 위의 자료를 근거로 영양교육 교수-학습 지도안의 작성과 응용방향을 제시하였다. 본 연구는 현행 교육과정 속에서 체계적인 영양교육이 이루어질 수 있도록 영양교육 교수-학습 지도안 개발을 위한 기본 방향을 제시하고 있다.

다국어 초록 (Multilingual Abstract)

School age is the most prosperous growth of human's developmental stage. In this age, children increase their required nutrients and form eating habits. Also eating experience influences strongly on intake, choice and behavior of their adulthood. Nowadays, women's social participation is increased by rapid industrialization, so it brings about undernourished children, loss, noninterference, and excess of children's nutrition, and unbalanced diet by abusing processed food and growing eating out. Therefore, by offering children on growth required nutrients and educating nutrition, it is very important to develop mind and body, proofread unbalanced diet, and form correct eating habits in their school age. To educate repeatedly and systematically in school age, education of nutrition in elementary school is the most important. Recently, effects of education of nutrition such as audio-visual materials and programs within the country evaluate by recognizing importance of education nutrition, but it lacks to propose model of education of nutrition in elementary school. Besides, system of nutrient tutor carries out from 2007 and nutrient tutor is arranged the school, but lesson of education of nutrition is assigned separately. Also, there are no good text book, materials even suggestion of educational direction.
Considering situation of school, this study propose execution of education of nutrition related to the whole subjects in the seventh curriculum to develop the guide plan of teaching method of learning easily and systematically. To achieve purpose of this study, it investigates allied theories, and analyzes text books of all grade in elementary school as practical approach. Based on the research, it classifies into goal and articles of education of nutrition and suggests media. The the guide plan of teaching method of learning is as follows. First, it classifies articles of education of nutrition into nutritional theory, eating attitude, function of eating habits, production of food, and traditional eating culture and defines the concept through preceding research. Second, it extracts the text book now in use related to it and analyzes each section. Third, it sets educational goal of each section, selects the articles, and shows educational media. Fourth, it suggests the guide plan of teaching method of learning for education of nutrition and direction of application based on upper materials. This study shows basic direction of developing the guide plan of teaching method of learning for education of nutrition to achieve education of nutrition systematically in a curriculum now in use.
