This study investigated the effects of cell cultured Acanthopanax senticosus extract (ASE) supplementation and swimming exercise on lipid profiles and carnitine concentrations in C57BL/6J mice fed high fat diets. Male C57BL/6J mice (n=50), aged 4 weeks, were divided into 5 groups based on exercise and/or ASE supplementation (0.5 g/kg of body weight): normal diet (N-C), high fat diet (H-C), high fat diet non-supplement & exercise (H-NSE), high fat diet supplement & no exercise (H-SNE), high fat diet supplement & exercis (H-SE). Liver nonesterified carnitine (NEC) was significantly higher in the H-SNE group than in the H-C group, and liver total carnitine (TCNE) levels were significantly higher in the H-SNE group than in the H-NSE and H-SE groups. Liver and muscle carnitine palmitoyltransferase-I (CPT-I) mRNA levels tended to be higher with ASE supplementation and/or exercise. These results suggest that supplementation with ASE and/or exercise might have a role in improving lipid oxidation.

This study investigated the working conditions and job satisfaction of school cafeteria, according to their employment type in Chonbuk, South Korea. Self-administered questionnaires were collected from 401 elementary, middle, and high school cafeteria employees. The data showed significant differences between regular and irregular employees. These factors were: previous work experience (p<.001), type of school (p<.001), the style of foodservice at a school (p<.001), the type of foodservice system (p<.05), and the number of meals served each day (p<.001). The working conditions for regular and irregular employees were significantly different with regard to several factors: these were union membership (p<.01), how they were paid (p<.05), their total working hours (p<.01), and difficulty of using their holidays (p<.01). Approximately 80.5% of the subjects were dissatisfied with the working conditions after the introduction of countermeasures for irregular employees. Results indicated that the average employee job satisfaction level was 2.53, but that there were not significant difference in the level of job satisfaction when comparing regular and irregular employees. The item employees were most satisfied with was having responsibility over meals for young students (3.37). They were least satisfied with their salary (2.00). An interesting issue for future study would be to determine the factors that could improve job satisfaction whilst satisfying the employees needs which in turn would improve the quality of foodservice.
전주지역 유아기 어머니의 친환경 농산물 이용실태 및 보육시설에서의 친환경 급식 요구도 조사

The principal objective of this study was to evaluate the consumption behavior of housewives in the Jeonju area with respect to their use of environmentally-friendly agricultural products (EAPs) and to assess the need for EAPs in childcare centers also in the Jeonju area. Self-administered questionnaires were given to and collected from 278 housewives 42.4% of whom employed and 57.6% were unemployed. Statistical data analysis was performed on the data collected using SPSS v. 12.0. The average score of awareness about EAPs was 3.57±0.56. The percentage of subjects who purchased EAPS was 76.3% regularly. On this group, 40.3% purchased EAPs 1~2 times in week. Unemployed housewives purchased more than employed housewives by a statistically significant margin (p<0.05). The most-purchased EAPs were vegetables, The average satisfaction score that housewives reported in relation to foodservice provided in childcare centers was 3.66±0.58. About 65% of the respondents felt that the EAPs-foodservice in childcare centers was an important factor for them in choosing of a childcare centers. Approximately 42% of the housewives responded that EAPs-foodservice in childcare centers was needed to improve the safety of foodservice provided in chidcare centers. The percentage of subjects who wanted to expand EAPs-foodservice in childcare centers even though the parents would have to bear some of the financial burden was 42.5%. A higher proportion of employed housewives wanted to expand EAPs-foodservice in childcare centers more than unemployed housewives, and this finding was statistically significant(p<0.05).
