      • 쑥을 첨가한 두부의 제조 및 저장 중 품질변화

        쑥의 효과적인 이용방법을 위해서 쑥의 최적건조 조건을 설정하고, 대두와 숙의 기능적 특성을 잘 살린 쑥을 첨가한 두부의 최적 가공조건과 제품의 저장 중 품질변화에 대해서 실험한 결과를 요약하면 다음과 같다. 1. 건조과정 중 쑥은 조단백질, 조지방 및 조회분은 감소하였으며, 반면 탄수화물은 증가하였다. 2. 1% NaHCO3에 데치기 하여 동결건조한 제품(FDB)이 쑥의 색도유지가 가장 잘 되었으며, Chlorophyll 잔존률도 가장 많았다. 3. 쑥을 첨가한 두부의 제조에서 응고제 GDL, 응고농도 0.1%, 응고온도 70-80℃, 쑥분말 첨가량 0.2%가 최적가공 조건이었다. 4. 쑥을 첨가한 두부의 저장에서 색도변화 및 TBA가의 변화로 미루어 보아 30℃에서는 12시간, 5℃에서는 4일 정도까지 저장 가능한 것으로 판단되었다. An investigation was carried out to study the optimum drying condition of mugwort, the optimum processing conditions of soybean curd added mugwort, and the quality change during storge of soybean curd added mugwort. Crude protein and crude lipid contents of mugwort were decreased during drying process, the contents of those in dried mugwort were 18.0-21.2%, 1.3%-4.0%, respectively. The freeze drying after blanching in 1% NaHCO3 solution(FDB) was the best in color index of dried mugwort, also the highest in retention ratio of total chlorophyll content. The yield of soybean curd with coagulants were showed that MgCl2, CaCl2, CaSO4 and GDL were 3.4g, 3.0g, 3.5g and 4.2g per 30g soy milk, respectively. GDL showed the highest yield among coagulants, and amount of GDL was suited at 0.1%. The optimum coagulation temperature was 70-80℃, addition amount of powered mugwort was 0.2%. The change of color index and TBA value were increased during storage. The quality of soybean curd added mugwort was maintained up to 12 hrs or 4 days at 30℃ or 5℃ storage, respectively.

      • 무기계 항균제(Ag-ZA)의 항균력에 관한 조사

        Zeolite-Na에 Ag이온을 치환시켜 제조한 무기계 항균제를 이용하여 식품의 부패나 식중독을 초래할 수 있는 5종의 세균에 대한 항균력을 조사하였다. 이 들 5종에 대한 최소 저해 농도는 Escherichia coli는 0.1%이상, Pseudomonas aeruginosa는 0.01%, Klebsiella pneumoniae는 0.05%, Staphylococcus aureus와 Bacillus subtlis는 0.03%로 나타났다. 이 들 세균에 대한 0.1%의 Ag-ZA 첨가에서의 살균효과는 90%의 균 사멸시간으로 나타낼 때 Escherichia coli는 70분, Bacillus subtlis는 92분, Staphylococcus aureus는 111분, Klebsiella pneumoniae는 158분, Pseudomonas aeruginosa는 231분으로 나타났고, Ag-ZA 첨가량의 증가에 따른 사멸 속도의 변화는 Gram 음성균에서는 속도의 증가가 나타나지만 Gram 양성균에서는 속도의 변화를 관찰할 수 없었다. The investigation of antimicrobial activity on the Ag-ZA which is prepared by ion exchanging between Zeolite-Na and Ag ion. Minimum inhibitory concentrations are 0.01% for Escherichia coli and Pseudomonas aeruginosa, 0.05% for Klebsiella pneumoniae and 0.03% for Staphylococcus aureus and Bacillus subtlis. 90% sterilization time with 0.1% Ag-ZA are 70min., 92min., 111min., 158min., 231min. for Escherichia coli, Bacillus subtlis, Staphylococcus aureus, Klebsiella pneumoniae and Pseudomonas aeruginosa respectively. The sterilization effect is more important in gram neative bacteria than gram positive bacteria.

        In order to make hygienic fishery ice, sea and city water were pretreated by physical method such as ultrafitration, ultraviolet sterilizer and heating. Among of the three treatments, U,V-light is the best method for application in ice-making enterprise practically. The fishery ice containing 3% salt decreased the contamination of microoganism and improved the ability of low temperature preservation. Key words: hygienic fishery ice, physical and chemical method.

      • 二重 Silicon Gate NMOS 工程을 利用한 2K EPROM 製作 및 測定

        2K bit EPROM array and test patterns were fabricated by double poly silicon-gate NMOS technicue. The channel length and width of the EPROM cell were 6㎛ and 12㎛, respectively. The operation of peripheral circuits was simulated by SPICE and the expected results were compared with experimental results. The optimal conditions of cell for programming were the drain voltage of 15-17V, gate voltage of 19-21V and the width of programming pulse of 30-35㎳, respectively. At that time, the threshold voltage was shifted from 1.6V(in erased state) to 9.4V (in programmed state).

      • Chlorella vulgaris의 배양을 위한 Photobioreactor에 관한 연구

        Until now, microalgae(Chlorella vulgaris), commonly known as seaweeds, are a rich and diverse source of unique feed for rotifer and microalgae and were cultivated mainly in an conventional open raceway pond photobioreactor. In this work, new photobioreactors were developd to avoid disadvantages of conventional photobioreactor. Higher growth rates could be achieved. As the light is the key factor for culturing microalgae, we focused on a sufficient supplement of kight for the microalgae. The developed photobioreactors were cylinder photobioreactor, spherical surface photobioreactor-Ⅰ, spherical surface photobioreactor-Ⅱ, plate type photobioreactor, raceway pond type photobioreactor and water wheel type photobioreactor. It was shown that the spherical surface photobioreactor-Ⅱ was the best one in respect to ??[1.05day??], also more resistant against drying up and pollution.

        The biochemical engineer is generally concerned with the industrial implementation of proceesses in which chemical or microbiological conversion of material take place in conjunction with the transfer of mass, heat, and momentum. These processes are scale-dependent, i.e., the fermentation, immobilization and contaminated soil treatment etc.. Understandably, biochemical engineer have always wanted to gain insight that will assist them in designing new industrial plants. Occasionally, they are faced with the same problem for another reason: an industrial facility already exists but will not function properly, if at all, and suitable measurements have to be carried out to discover the cause of the difficulties and provide a solution.

      • 동물원에서 사육중인 Japanese Macaque (Macaca fuscata)에서 Zoletil 마취에 관한 연구

        To evaluate the effects of Zoletil (tiletamine-zolazepam) that have been widely used for the chemical restraint and anesthesia of primates, on physiologic alteration, blood gas analysis and anesthetic duration in the Japanese macaque(Macaca fuscata), this study was carried out. Zoleril was administered by intramuscular injection, Evaluation of temperature, heart rate, respiration rate and blood gas analysis were performed before administration ancl at 1,10, 20, 30, 40, 50 and 60 min after administration, and induction and maintenance time was recorded. There was no significant difference in heart rate, PCO₂PO₂after Zolcril administration and temperature, respration rate, pH were significant difference compared with those of before administration, The induction time was 2.5±l.Omin and maintenance time was 86±23.2min. It was considered that Zoletil could he usefully used for the sedation and immobilization of Japanese macaque reared in zoological garden.

        Abstract - In this paper, we propose a bidirectional mobile Ad Hoc routing protocol based on AODV(ad-hoc on-demand distance victor routing) with QoS(quality of service) support. At presence, wireless mobile communication focuses on how to efficiently support mobility of users more than QoS guarantee. However, in order to satisfy requirement of various applications which have been or will be served, QoS guarantee between end point is a very important issue. The existing AODV routing protocol is implemented to use only BE (Best Effort) service. However, actual wireless mobile environment requires to reduce a waste of communication resources and meet with the real-time change of data paths by setting up routes with QoS support, considering available communication resources at each node in advance. Therefore, in this thesis, we propose an adaptive QoS support method using hello message in order to rapidly meet with the change of available communication resources and to smoothly perform route maintenance. For performance evaluation, we analyzed the average date reception rate. At that time, we used evaluation parameters such as node's mobility -stop time, hello message period, and packet priority, considering the node's mobility and the number of best effort/QoS data flows. As results, we found that with our proposed method the average data reception rate was increased 16.3% for 0 mobility-stop second case and 4.7% for 300 mobility-stop second case.
