A microdialysis coupled flow injection amperometric $({\mu}FIA)$ biosensor was calibrated to measure the concentration of sucrose using 11 standard samples from 2 ml to 70 ml of sucrose solution. The output of the sensor increased linearly with an increase in the sucrose concentration with an $r^2$ correlation of 0.99. The amperometric biosensor was then applied to measure the sucrose concentration of 4 commercial samples (Orange and Pineapple juices, Pepsi, Sprite) and the results compared with those by HPLC. Around $20\~30\%$ error was observed in sucrose concentration measurements of the samples analyzed. The sensor has potential in rapid measurement once the calibration is done. Potential for on-line sensing is also discussed.
발효공정 자동제어를 위한 포도주와 동치미 발효 중 알코올과 젖산 농도 온라인 측정

In this study, a flow injection analysis sensor unit was developed for on-line monitoring of the fermentation process. The performance was verified by on-line measuring the concentration of alcohol and lactic acid of the fermentation process of wine and Dongchimi. The alcohol and lactic acid concentrations of the samples were measured every 12 hours during the whole fermentation process and compared with those by a GC and HPLC. The concentration relative errors of alcohol on the fermentation process of wine showed over 500% within 24 hours and over 60% after 24 hours. The concentration relative errors of lactic acid on the fermentation process of Dongchimi showed over 80% during the whole fermentation process. In case of alcohol, the high ratio of dilution increased the relative error. In case of lactic acid, the activity variation of lactate oxidase increased the relative error. Though the poor relative error, the sensor unit had potential to on-line monitoring of the fermentation process but some problems to overcome for an commercial application.
