        This study was conducted to search for characteristics of unwed mother. The subjects were residing 160 unwed mothers in welfare facilities located in Seoul, Gyeonggi, Jeonnam and Daegu. The data were collected from August 2002 to February 2003. The major findings were as follows. ·The subjects were under 20 years(50.6%), under high school graduate(52.2%), having both parents(60%). ·Among the subjects, 74.4% were to choose the adoption, 83.3% were the time of first sexual relation under 15years, 55% were not of former pregnancy experience, 50% had experience of abortion in former pregnancy. ·First sexual relation was acted natually(50%) but after sexual relation, 49.4% was feeling of repent ·Attitude of sexual relation was represented outstandingly that sexual relation may be a consider expression of love. ·Among the subjects, the reason of noncompliance of contraception were because of unknown to method of contraceptions(21.9%). We need to develop educational programe to improve compliance and knowledge of contraception of unwed mother.

        항공사 승무원의 비행 스트레스와 식행동에 관한 연구

        This study investigated the relationship among the flight stress, disease and eating behavior of the Airline cabin crews. Self administered questionnaires were collected from three hundred and twenty cabin crews. Statistical data analysis was completed using a SPSS v.10.0 program. The results were summarized as follows: Before the flight, the maladaptation to the oversea foods was the most common stress for the crews less than one year flight experience. During the flight, fastidious arrangement and loss of appetite due to overwork were the most common stresses. After the flight, anorexia due to jet lag was the most common stress. Backache and stomachache were the most common job-related ailments of the airline cabin crews. During the flight, the intakes of carbonated drinks and coffee were most common. After the flight, water was the most common drink they consumed.

        뽕잎추출액코팅농도에 따른 뽕잎쌀밥의 품질에 관한 연구

        The purpose of this study was to assess the optimum coating ratio for rice, using various ratios of mulberry leaves extract, 1.0, 1.5, and 2.0%, and to determine the optimum ratio of added water, in proportion to the total weight of mulberry rice. The moisture content of the soaked rice, and the optimum water uptake rate, moisture content of the cooked rice, as well as its blue and color values, mechanical characteristics, internal structure and sensory evaluation, were analyzed. The statistical data analyses were completed using the SAS program. The results are summarized as follows: The moisture content of mulberry rice was less than that of raw rice. The average optimum water uptake of the soaked mulberry rice at the different water temperatures, 10, 20 and 30℃, was 20% of the total weight of the raw mulberry rice. As for the results of the sensory evaluation; 140% water, in proportion to the total weight of raw mulberry rice, was judged to be the optimum. The average moisture content of the cooked mulberry rice was 45~50%, but there was no significant difference in the various coating ratios. The blue value of the cooked mulberry rice awas highest on the first day of cooking. The L- and a-values decreased with increasing coating ratio, but the b-value increased under the same conditions. As for the mechanical characteristics,; the adhesiveness, hardness and springiness decreased during 2 days of storage. The internal structure of the mulberry rice, observed by SEM, showed a close structure on increasing the coating ratios of mulberry leaves extracts. It was concluded that the optimum coating ratio of mulberry rice and ratio of added water for cooking whereas 1.5 and 140%, respectively, in proportion to the total weight of raw mulberry rice.

        인천지역 대학생에 의한 대학급식소의 급식서비스에 대한 품질 평가

        This study was conducted to investigate the quality assessment of performance of the university foodservice. Self administered questionnaires were collected from 305 students living in Incheon. Statistical data analysis was completed using a SPSS v. 10.0 program. The results were summarized as follows: 61.4% of male students and 48.1% of female students responded to have lunch regularly. Only 23.4% of male students and 14.1% of female students used the university foodservice daily. Reasons for the irregularity of lunch were responded as "lecture", "eating when I want" and "appointment with friends", etc. The quantity, temperature, nutritional value, appearance, hygiene, taste and freshness of foods and price of menus were evaluated as appropriate but using seasonal foods, number of side-dishes, etc. as unsatisfactory. Service speed, cloth hygiene, neatness and kindness of employee were evaluated as appropriate. For the facilities of foodservice, counter location, menu board and lighting facilities were evaluated as appropriate but heating facilities, disponsition of tables and chairs of dining hall were as unsatisfactory. Sanitation of floors and walls of dining hall, restroom and utensils, etc. was evaluated as low.

        전북지역 학교급식소의 급식유형에 따른 친환경농산물 이용실태, 학교영양사의 인식 및 만족도 연구

        This study was conducted to investigate the utilization, recognition, and satisfaction of environment-friendly agricultural products (EAPs) in school food services according to the type of foodservice in the Jeonbuk area. Among the 270 school food service providers evaluated, 56.3% of the schools were located in an urban area and 43.7% were in a rural area. About 80% of urban schools used the EAPs for school foodservice, and 89.8% in rural schools (p<.05). The purchase frequency of grain (p<.01), fruits (p<.05), and processed foods (e.g. Tofu) (p<.001) was significantly different between the urban and rural schools. The perception of school dietitians in urban and rural schools between the EAPs and general agricultural products was significantly different (p<.05). The most different fact was safety (p<.001). Most school dietitians has a gut understanding and a lot of confidence about the system of EAPs (p<0.01). The satisfaction score with EAPs was 3.35; in the urban schools it was 3.36 and in the rural schools 3.12 (p<.01). The satisfaction with EAPs in urban and rural schools was significantly different with regard to several factors; these were ‘design’ (p<.05), ‘color’ (p<.001), ‘fresh’ (p<.001), and ‘diversity’ (p<.01). There are conflicting views between the urban and rural schools for the additional costs brought by using EAPs (p<.01). In conclusion, our central and local governments should change their roles in financially positive ways and reflect the issue to make the policy effective.

        전주 지역 일부 보육교사의 식행동 및 급식 지도 활동에 대한 연구

        This study was conducted to investigate the dietary behavior of day-care center teachers and their meal attitudes during meal time in Jeonju area. Self administered questionnaires were collected from 266 day-care center teachers who worked in a national(public) or private day-care center. The Statistical data analysis was conducted using SPSS v. 12.0. All subjects were women, and 64.7% were married(p<0.001), over more than 60% were junior college graduates(p<0.05), and 73.7% had salaries greater than 1,000,000 won(p<0.001). The breakfast skipping ratio of the subjects was very high, and about 66.5% of the respondents had irregular meals. The snack intake ratios of the subjects in private day-care centers were higher than the subjects in national(public) day-care centers(p<0.001). Approximately 56% of the subjects responded that education about eating is very important for providing balanced nutrition to young children. About 84% of subjects had no experience with the continuing-education program for teachers(p<0.01), and they wanted to know more about balanced nutrition. The meal attitude education score during meal time was 4.53±0.36. The relationship between meal attitude education and the dietary behavior of day-care teachers was significantly different based on the frequency of overeating(p<0.05) and self-recognition of eating habit(p<0.05). These findings suggest that a nutrition education program for day-care center teachers should be developed so that they can effectively manage meal attitude education for young children and provide good nutrition for themselves.

        전주 지역 여대생의 체중 조절에 대한 관심도 및 실행 행태에 관한 연구

        This study was conducted to investigate the weight concerns of female university students living in Jeonju, as well as their control on behavior. Self-administered questionnaires were collected from 285 students. Statistical data analysis was completed using the SPSS v. 11.0 program. The results are summarized as follows: The average weight, height, and BMI of the subjects were 21.43 kg, 161.93 cm, and 19.8, respectively. With regard to body image, most were dissatisfied with their figures, especially the hips and thighs. About 42% of the students estimated their figure as ``slightly fat``, while 5.4% stated ``very fat``, even though their BMI classified as ``normal``, Four percent of the underweight students described themselves as being ``fatty``. Approximately 93% of the students had strongly pursued weight control, and 45.3% reported wanting to lose about 2-5 kg. Almost 73% of the respondents had weight loss experience. The primary reason for weight control was to improve self-confidence. Only 19.6% had succeeded in losing weight, while nearly 48% had stopped dieting. To reduce weight, about two thirds of the students ate less(e.g. no snacks, no sweets). Fifty percent tried to reduce weight by more physical activity(e.g. sports). Television(50.9%), friends(48.4%), and newspapers/magazines(40.4%) were essential sources of pertinent information. In conclusion, the results show that female students in Jeonju have a great interest in weight reduction. Thus, the majority are willing to try several methods for weight reduction, which however, are not promising and not based on a lasting nutritional change. Therefore, it`s necessary to increase cooperation among those concerned(e.g. dietitians, teachers, parents, media) and to develop weight-control programs that take into consideration lifestyle and daily habits, as well as combine physical activity, nutrition, and behavioral and personality training.
