The purposes of this research were to establish nutritional standards, to suggest appropriate serving size according to food type for nutritional management in institutional foodservice for children, to establish evaluation system(guideline) for Center for Child-care Foodservice Management(CCFSM) and to analyze the improvement effect on the environment of institutional foodservice for children followed by establishment and operation of the center. In order to establish nutritional standards for institutional foodservice for children, actual status of setting nutritional standards in CCFSM was investigated, and the representative nutritional value of each food group were calculated. The optimal serving size per meal in each kind of food were suggested according to children’s age on the basis of existing data on children’s nutrient intake status and practical use of nutritional standards. In addition, sample menus were developed based on nutritional standards derived from this study, and the educational materials for foodservice practitioners were developed. Finally, the applicability of the nutritional standards and the educational materials in fields was evaluated. To develop evaluation system of operation performance in CCFSM and analyze operational effect, we developed evaluation indicators(guidelines) for effective management of performance in CCFSM, evaluated changes in level of sanitary and nutritional management of children-targeted food service institutions by operation of CCFSM, derived evaluation items to compare quantitatively the level of sanitary and nutritional management between the region of center established and unestablished children-targeted food service institution, and performed the pilot evaluation. The establishment of nutritional management standards that reflected scientific ground on the basis of research results would contribute to improve nutritional quality in child-care foodservice and children’s dietary status by providing standards for evaluation of children’s dietary intake status and the quality of foodservice menus. Besides, the educational materials developed for foodservice practitioners would be used for development of various educational materials for childe-care foodservice management and could be applied to operation of CCFSM. Furthermore, it is considered that this results would contribute to early settlement of new Centers for Child-care Foodservice Management by establishing evaluation systems of operation performance, and be applied to the policies for improvement of children’s foodservice and activation of CCFSM.
