본 연구의 목표는 국내에서 유통되는 주요 식용유지류인 참기름, 옥배유, 대두유, 올리브유, 해바라기유의 탄소, 수소, 산소 안정동위원소비율 양상에 대한 신뢰성 있는 분석 자료를 구축하고 특히, 참기름의 동위원소비율 양상에 대해 집중적으로 조사하여 이를 활용한 참기름의 원산지와 변조여부판별을 위한 분석법을 개발하는데 있다. 이를 위해 참기름 90점(국내산 51점, 중국산 19점, 인도산 14점, 국내 시판 참기름 6점), 옥배유, 대두유, 올리브유, 해바라기유 각 3점, 그리고 향미유 17점의 δ¹³C, δD 및 δ¹⁸O 값을 측정하였으며 국내산 참기름 원산지의 지리적 특성(위도, 해안과의 거리, 고도)과 기후적 특성(누적 강수량, 평균습도, 평균온도)이 국내산 참기름의 동위원소비율 양상에 미치는 영향을 조사하였다. 변조 참기름의 동위원소비율 양상은 이종식용유로 옥배유 또는 대두유를 혼합한 국내산 참기름 및 시중에서 유통되고 있는 향미유를 이용해 분석하였다. 이렇게 분석된 결과들을 활용해 통계기법 중 정준 판별분석을 실시하여 참기름의 원산지와 변조여부 판별 가능성을 검토하였다. 탄소 동위원소비율의 경우, 국내산 참기름은 -31.72‰ ~ -28.19‰, 국내 시판 참기름은 -29.79‰ ~ -28.67‰, 중국산 참기름은 -29.91‰ ~ -28.78‰, 인도산 참기름은 -30.35‰ ~ -28.55‰, 옥배유는 -17.92‰ ~ -15.84‰, 대두유는 -30.63‰ ~ -30.31‰, 올리브유는 -29.57‰ ~ -28.65‰, 해바라기유는 -29.35‰ ~ -27.33‰, 그리고 향미유는 -30.13‰ ~ -16.21‰의 δ¹³C 값을 나타내었다. 수소 동위원소비율의 경우, 국내산 참기름은 -211.83‰ ~ -119.01‰, 국내 시판 참기름은 -181.86‰ ~ -145.01‰, 중국산 참기름은 -198.51‰ ~ -140.17‰, 인도산 참기름은 -215.66‰ ~ -163.21‰, 옥배유는 -153.66‰ ~ -145.72‰, 대두유는 -154.34‰ ~ -143.94‰, 올리브유는 -128.44‰ ~ -122.05‰, 해바라기유는 -146.57‰ ~ -138.42‰, 그리고 향미유는 -182.10‰ ~ -154.92‰의 δD 값을 나타내었다. 산소 동위원소비율의 경우, 국내산 참기름은 12.16‰ ~ 21.95‰, 국내 시판 참기름은 16.78‰ ~ 25.12‰, 중국산 참기름은 8.91‰ ~ 25.34‰, 인도산 참기름은 16.12‰ ~ 26.28‰, 옥배유는 17.19‰ ~ 18.63‰, 대두유는 18.65‰ ~ 20.32‰, 올리브유는 25.40‰ ~ 26.81‰, 해바라기유는 17.71‰ ~ 22.37‰, 그리고 향미유는 13.06‰ ~ 20.05‰의 δ¹⁸O 값을 나타내었다. 국내산 참기름의 δ¹³C, δD 및 δ¹⁸O 값은 각각 원산지의 위도, 해안과의 거리, 5 ~ 9월의 누적 강수량과 유의적인(p < 0.01) 음의 상관관계를 보였다. 정준 판별 분석법을 실시한 결과, 참기름 시료 84점 중 75점이 정확하게 원산지(국내산, 중국산, 인도산)가 분류되어 89.3%의 높은 적중률을 보였다. 반면에 참기름과 향미유의 판별 분석에서는 향미유 시료 17점 중 9점만이 참기름과 구별되어 52.9%의 낮은 적중률을 나타내었다.

The aims of this study were (1) to analyze carbon, hydrogen, and oxygen stable isotope ratios of sesame, corn, soybean, olive, sunflower, and sesame flavored oils that are distributed in Korea, (2) to investigate the effects of geological (latitude, distance from the sea and altitude) and climatic (precipitation, mean relative humidity and mean temperature) characteristics of the sesame producing sites of Korea on the stable isotope ratios of Korean sesame oil, and (3) to determine the geological origins of sesame oil and the adulteration of sesame oil on the basis of isotopic data. The δ¹³C, δD and δ¹⁸O values were analyzed in 90 samples of sesame oil (51 Korean, 19 Chinese, and 14 Indian sesame oils and 6 sesame oil from Korean market), 17 samples of sesame flavored oil, and three samples each for the others. The δ13C values were -31.72‰– -28.19‰ in Korean sesame oil, -29.79‰– -28.67‰ in sesame oil from Korean market, -29.91‰– -28.78‰ in Chinese sesame oil, -30.35‰– -28.55‰ in Indian sesame oil, -17.92‰– -15.84‰ in corn oil from Korean market, -30.63‰– -30.31‰ in soybean oil from Korean market, -29.57‰– -28.65‰ in olive oil from Korean market, -29.35‰– -27.33‰ in sunflower oil from Korean market, and -30.13‰– -16.21‰ in sesame flavored oil. The δ¹⁸O values were 12.16‰– 21.95‰ in Korean sesame oil, 16.78‰– 25.12‰ in sesame oil from Korean market, 8.91‰– 25.34‰ in Chinese sesame oil, 16.12‰– 26.28‰ in Indian sesame oil, 17.19‰– 18.63‰ in corn oil, 18.65‰– 20.32‰ in soybean oil, 25.40‰– 26.81‰ in olive oil, 17.71‰– 22.37‰ in sunflower oil, and 13.06‰– 20.05‰ in sesame flavored oil. The δ¹³C, δD and δ¹⁸O values of Korean sesame oil were significantly (p < 0.01) negatively correlated with latitude, distance from the sea, and precipitation (May– September), respectively. A good discrimination between sesame oils from Korea, China, and India was achieved, with 89.3% of the samples correctly classified into the producing site, whereas only 52.9% of sesame flavored oil could be discriminated from sesame oil, by combining three isotope ratios and applying the principle of multivariate discriminant analysis.
