      Human body is composed of many cells that have several kinds of membranes. These membranes contain proteins, cholesterol, carbohydrates and phospholipids. Especially phospholipids are the essential membrane components that play a role in biosynthesis and antiaging of cells, and are amphoteric in nature and can act as emulsifying agents, helping to deliver materials from cell membrane to cytoplasm Among phospholipids, phosphatidylcholine(Common name lecithin) functions as a precursor of acetylcholine in the body and is involved in the synthesis of neurotransrnitter. Therefore, the lack of choline in the diet results in demetia, showing drop of memory, judgment and a sense of direction. Lecithin that contains the choline is the essential component to help normal functioning of nerve and to prevent nervous disease.
      With the rapid economic growth, the eating habit of Korean people was changed greatly. A high fat intake, particularly ch이sterol and saturated fatty acids, might lead to coronary heart diseases. Lecithin have a role in reducing the deposition of cholesterol and triglyceride in blood-vessels. As a result, lecithin can effectively decrease the incidence of the atherosclerosis, heart diseases and hypertension.
      Phospholipid are also an essential component of the bile, where their detergent properties aid in the solubilization of cholesterol. A decrease of phospholipid in the bile can result in the formation of gallstones. The people that show that symptom must enhance the intake of lecithin. Yolk, soybean, cauliflower and cabbage are good sources of lecithin. Intake of these food in common diet is desirable. Recently highly concentrated lecithin products are commercially being produced on a type of healthy food. The higher meat intake, the more the amount of lecithin needed in the body.
