Three strains among 14 isolates from the feremented maeju were shown the strong phytase productivities. The phytase acticities in manufacturing maeju with these mold were maximized after incubating at 30℃, pH 6.0 for 5 day. The contents of same amino acids was increased in maeju manufactured with these phytase-producing mold and the rate of phytic acid degradation was much higher in maeju manufactured with a single or mixed cultures of these mold than in traditional maeju.
