Among 300 fungal colonies isolated from soil and air, a fungus has been selected for its ability to produce high glucoamylase activity at both acidic pH and high temperature. It has been identified as Aspergillus species by its morphological characteristics.
The crude enzyme preparation from this fungus produced only single product, glucose, when soluble starch was used as a substrate. The crude enzyme can also decompose other carbohydrates such as inulin, amylopectin, sucrose and cellulose indicating the fungus can produce inulase, invertase and cellulase. In addition, the isolated fungus produced high proteolytic activity at extreme low pH, and the protease was quite stable at that pH. Therefore, this fungal strain could be utilized as a potential producer of digestive aid.
