Recently, many local governments have been applied composting as food waste recycling method. In composting, they have encountered difficulty such as effective operating condition to produce good quality compost and odor control during the process. In this study, the emission of odor materials during the composting of food waste was investigated. In qualitative analysis, approximately 30 odor producing materials were detected. They were α-pinene, dl-limonene, ethyl acetate, methyl ethyl ketone, diethyl ketone, methly propyl ketone, dimethyl disulfide, dimethyl sulfoxide, acetone, ethanol, pyridine, benzene, isopropyl alcohol, 2-butanol, isoamyl alcohol, toluene. In quantitative analysis, ammonia, hydrogen sulfide, dimethyl disulfide, trimethylamine, styrene, acetaldehyde were detected which were regulated as odor materials by government. In general, the type and the concentration of odor material were related with the progress of composting. Some of odor materials, detected in qualitative analysis were seemed to precursors during bio·chemical transformation of composting.
