The COVID-19 pandemic served as a decisive catalyst for the digital transformation of the domestic agri-food distribution structure. The rapid growth of the online food market, driven by the spread of non-face-to-face consumption culture, demands organic changes where shifts in consumer purchasing patterns lead to structural innovations in the wholesale distribution stage, going beyond the simple addition of purchasing channels. Therefore, this study aims to identify the linkage structure between consumption and wholesale within the agri-food online distribution ecosystem, analyze time-series changes in food consumption behavior (2020–2024), and empirically verify the introduction performance and economic effectiveness of agricultural online wholesale markets in response to these changes.
To this end, this study conducted analyses divided into consumption and wholesale distribution aspects. First, for the consumption behavior analysis, raw data from the "Food Consumption Behavior Survey" by the Korea Rural Economic Institute (3,335 respondents in 2020; 3,188 respondents in 2024) were utilized. Ordered Probit and Bivariate Probit models were applied to comparatively analyze changes in the determinants of online food purchase frequency and satisfaction. Second, for the wholesale distribution analysis, based on the operational performance of Honam Cheong-gwa’s "Online Exchange" (2022–2024), paired t-tests were conducted on five major items (cabbage, shiitake mushroom, broccoli, head lettuce, and sweet pumpkin) to verify price differences between online trading and offline auctions, as well as distribution efficiency.
The major research results are as follows. First, online food purchasing in consumption areas has settled as a structural ‘New Normal,’ not a temporary phenomenon. While online consumption in 2020 focused on processed foods and convenience, purchasing items advanced to center on fresh foods (agricultural, livestock, and fishery products) in 2024. In particular, the 2024 analysis revealed that the use of dawn delivery and digital information utilization capabilities acted as key factors increasing purchase frequency. A high correlation between price and quality satisfaction was confirmed, indicating that consumers perceive this as an integrated purchasing experience.
Second, agricultural online wholesale markets contributed to increasing producer received prices by shortening distribution stages. The empirical analysis of Honam Cheong-gwa’s Online Exchange showed that online transaction unit prices for major items such as cabbage (+33.4%), shiitake mushroom (+18.3%), and broccoli (+45.0%) were statistically significantly higher than offline auction unit prices. This is interpreted as the result of the "Separation of Transaction and Logistics (Sangmul-bunri)" method converting the existing three-stage logistics (Production site–Wholesale market–Consumption site) into a two-stage direct delivery system (Production site–Consumption site), thereby reducing logistics costs and preserving product value by preventing freshness degradation.
Third, the online wholesale platform overcame the geographical limitations of local wholesale markets and performed a nationwide price discovery function. By forming price levels equivalent to the Garak Market, the domestic reference price, for the analyzed items, it was proven that the online wholesale market is an alternative distribution governance that can resolve sales channel constraints for local production sites and alleviate the concentration phenomenon in the metropolitan area.
This study is significant in confirming that changes in food consumption behavior in consumption areas brought about the digital transformation of agricultural wholesale markets, and in empirically demonstrating that the online wholesale market is an effective model contributing to distribution cost reduction and increased farm household income. However, there is a limitation that the current growth is partly based on government policy support such as fee exemptions, requiring a review of whether self-sustaining competitiveness can be maintained even if support is reduced in the future. Therefore, for the sustainable development of the agricultural product distribution ecosystem, the establishment of the legal status of online wholesale markets through the revision of the 「Act on Distribution and Price Stabilization of Agricultural and Fishery Products」, standardization and grading of production site products, and balanced expansion of digital logistics infrastructure are required.
