Leuconostoc mesenteroides ATCC 27258과 Lactobacillus 5종으로부터 선별된 Lactobacillus bulgaricus KCCM 35463을 환원 탈지유배지에 혼합 배양하여 젖산발효 조건을 검토하였다.
혼합배양의 최적 해양조건은 10.0 %(w/v); skim milk, 0.1 %(w/v); yeast extract, 10.0 %(w/v); sucrose, pH; 6.8, 30℃이며 두 균주의 starter접종 비율은 1:1이 가장 좋았다.
배양액의 점도 변화에 영향을 미치는 sucrose 농도는 10.0%(w/v)에서 가장 효과적이였다.
혼합배양시의 pH는 각각의 단독배양보다 낮았으며, 생균수는 높았다.
Leuconostoc mesenteroides의 배양여액은 Lactobacillus bulgaricus의 생육을 촉진하였으나 100℃에서 10분간 열처리에 의해 촉진력이 소실되었다.
배양액의 점도는 Leuconostoc mesenteroides의 단독배양보다는 혼합배양에서 높게 나타났다.
24시간동안 배양한 발효액의 점도와 pH는 각각 2,750cps, 3.5이였으며 생균수는 8.7×10^(9) cells/㎖이였다.

Leuconostoc mesenteroides ATCC 27258 and Lactobacillus bulgaricus KCCM 35463 selected among 5 Lactobacillus strains were incubated together in reconstituted non-fat skim milk medium, and then lactic fermentation conditions were investigated.
The optimum conditions for viscous lactic acid beverage fermentation by mixed culture were as follows: l.%(w/v); skim milk, 0.l%(w/v); yeast extract, 10.0%(w/v); sucrose, pH; 6.8, 30℃ and starter ratio of Leuconostoc mesenteroides ATCC 27258 to Lactobacillus bulgaricus KCCM 35463 was most effective at 1 : 1 for mixed culture of the two strains.
The sucrose concentration on the production of viscous culture broth was most effective at 10 percent.
The final pH of mixed culture fermentation broth was lower than that of single culture broth of each microorganism.
The viable cell number of mixed culture fermentation broth was higher than that of single culture broth of each microorganism.
The culture broth of Leuconostoc mesenteroides was stimulated the growth of Lactobacillus bulgaricus. But the stimulating activity disappeared when the culture broth was heated at 100℃ for l0min.
The viscosity of mixed culture fermentation broth was higher than that of single culture broth of Leuconostoc mesenteroides.
