들깨가루의 향 및 향미 특성과 소비자 거부 역치에 관한 연구
들깨가루 (Perilla frutescens)는 높은 불포화지방산 함량으로 인해 산화적 품질 저하에 매우 취약하지만, 이에 대한 품질 규격은 아직 충분하지 않다. 본 연구는 산가가 상이한 시판 들깨가루를 대상으로 소비자 기각 한계값 (Consumer rejection threshold, CRT)과 기각 한계값 (Rejection threshold, RjT)을 추정하고, 평가 방식과 적용된 식품에 따라 소비자의 선호 및 감각특성이 어떻게 달라지는지 분석하고자 하였다. 본 연구에서는 시판 들깨가루 중 산가 수준이 낮은 것부터 높은 것까지 포 함되도록 6종의 시료 (1.66–6.63 mg KOH/g)를 선정하였다. 이 중 산가가 가장 낮은 시료 (1.66 mg KOH/g)를 대조군으로, 나머지 시료를 실험군으로 설정하였다. 평가는 소비자 79명을 대상으로 연구 1에서 들깨가루 10 g의 향 /냄새 평가, 연구 2에서 들깨가루 2 g의 맛/향미 평가, 연구 3에서 무나물에 들깨가루를 20:1의 비율로 혼합하여 8 g의 맛/향미를 평가하였다. 각 연구에 서는 2점 강제선택법 (2-Alternative Forced Choice, 2-AFC)과 개방형 질 문을 실시하였으며, 개방형 질문을 통해 소비자가 자유롭게 서술한 응답으로 부터 감각특성을 도출하였다. 세 연구 모두에서 산가가 증가함에 따라 대조군 선택 비율은 전반적으로 증가하는 경향을 보였다. 연구 1 에서는 산패/오래된 향이 대조군 선택 비율과 양의 상관을 보였으며, CRT 와 RjT 는 각각 7.36 및 10.64 mg KOH/g 으로 예측되었다. 연구 2 에서는 쓴맛이 대조군 선택 비율 증가와 관련된 특성으로 나타났으며, 연구 1 보다 낮은 기각 한계값이 산출되었다 (CRT: 2.73, RjT: 6.81 mg KOH/g). 반면 연구 3 에서는 회귀모형의 설명력이 가장 높았고 (R²=0.711), 가장 낮은 기각 한계값이 산출되었으며 (CRT: 1.96, RjT: 6.65 mg KOH/g), 매운/알싸한맛이 대조군 선택 비율과 양의 상관을 보였다. CRT 와 RjT 는 연구 1 에서 연구 3 으로 갈수록 낮아졌으며, 이는 적용된 식품 내에서 맛/향미를 평가하는 조건이 향/냄새만 평가하는 조건보다 산화적 품질 저하를 더 민감하게 감지할 수 있음을 보여준다. 다만, 시판 제품을 사용하였기에 대조군을 산가가 없는 시료가 아닌 산가가 낮은 시료로 설정하는 한계가 있었다. 따라서 연구 1 의 CRT, RjT, 연구 2 의 RjT 의 회귀 기반 추정값이 실험 산가 범위를 벗어나 높게 산출되었므로 민감도 측면에서 제한적으로 해석할 필요가 있다. 연구 1 과 연구 2 의 회귀모형의 설명력은 낮고 (R²=0.483, 0.254), 연구 3 에서는 높은 수준이었는데 (R²=0.711), 이는 원료 평가에서의 기각이 산가만으로 설명되기 어렵고, 시료의 감각특성과 식품 적용 여부에 따라 달라질 수 있음을 보여준다. 따라서 들깨가루의 품질 평가와 저장 가능 기간 설정에는 산가와 같은 화학적 지표뿐 아니라 소비자가 인지하는 감각특성과 적용 식품의 효과를 함께 고려할 필요가 있다.

A Study on Odor and Flavor Characteristics and Consumer Rejection Threshold of Perilla Seed Powder
Perilla seed powder (Perilla frutescens) is highly susceptible to oxidative quality deterioration owing to its high content of unsaturated fatty acids, yet quality standards for the powder remain insufficient. This study aimed to estimate the consumer rejection threshold (CRT) and rejection threshold (RjT) of commercial perilla seed powders differing in acid value, and to analyze how consumer preference and sensory characteristics vary according to the evaluation method and the food to which the powder is applied.
After preliminary screening, six commercial perilla seed powder samples were selected to span a wide range of acid values (1.66–6.63 mg KOH/g). The sample with the lowest acid value (1.66 mg KOH/g) was used as the control, and the remaining samples served as test samples. Seventy-nine consumers evaluated the samples under three conditions: odor and aroma assessment of 10 g of the powder as-is (Study 1), taste and flavor assessment of 2 g of the powder as-is (Study 2), and taste and flavor assessment of 8 g of a seasoned radish dish (mu-namul) prepared with perilla seed powder at a 20:1 (mu-namul to powder) ratio (Study 3). In each study, a 2-alternative forced choice (2-AFC) test and open-ended questions were administered, and sensory characteristics were derived from the consumers' freely described responses.
Across all three studies, the proportion of consumers selecting the control sample generally increased as the acid value of the test samples increased. In Study 1, rancid/old odor was positively correlated with the control selection rate, and the CRT and RjT were estimated at 7.36 and 10.64 mg KOH/g, respectively. In Study 2, bitterness was the attribute associated with the increase in control selection, and lower thresholds were obtained than in Study 1 (CRT: 2.73, RjT: 6.81 mg KOH/g). In Study 3, the regression model showed the highest explanatory power (R² = 0.711) and the lowest thresholds (CRT: 1.96, RjT: 6.65 mg KOH/g), with a pungent/sharp taste positively correlated with the control selection rate. Both the CRT and RjT decreased progressively from Study 1 to Study 3, indicating that evaluating taste and flavor within an applied food matrix detects oxidative deterioration more sensitively than assessing odor and aroma alone. Because commercial products were used, the control had to be set as the sample with the lowest acid value rather than an acid-value-free sample; consequently, the regression-based CRT and RjT of Study 1 and the RjT of Study 2 were estimated beyond the experimental range of acid values and should therefore be interpreted as model-based estimates with limited sensitivity. The explanatory power of the regression models was low in Studies 1 and 2 (R² = 0.483 and 0.254) but high in Study 3 (R² = 0.711), suggesting that rejection in the evaluation of the raw material is difficult to explain by acid value alone and may vary with the sensory characteristics of the sample and with food application. Therefore, the quality evaluation and shelf-life determination of perilla seed powder should consider not only chemical indices such as acid value but also consumer-perceived sensory characteristics and food matrix effects.
