This study evaluated the long-term microbial contamination status of slaughtered meats in Jeollanam- do, Korea, using five years (2021∼2025) of routine microbiological monitoring and Hazard Analysis and Critical Control Point (HACCP)-based slaughterhouse inspection data generated by Jeollanam-do Veterinary Service Laboratory. In total, 24,358 carcass samples from beef, pork, lamb, chicken, and duck were analyzed for aerobic plate count (APC) and Escherichia coli (Biotype I), while 35,760 and 39,771 samples from HACCP-applied slaughterhouses were tested for E. coli and Salmonella spp., respectively. Across all species, APC and E. coli levels remained consistently low, with the majority of samples meeting the recommended or regulatory criteria throughout the study period. Exceedances of the APC criteria were rare, and no E. coli results exceeded the maximum tolerance limits under HACCP evaluation. Salmonella spp. were detected at a low overall rate (0.13%), with higher detection rates observed in poultry than in other species. Although most slaughterhouses met the compliance criteria, repeated Salmonella detection and non-compliance were concentrated in a limited number of poultry slaughterhouses, suggesting localized and process-related contamination risks rather than systemic failures. Overall, these findings demonstrate that the current HACCPbased microbiological monitoring and cumulative evaluation framework effectively maintained stable hygiene conditions over the long term in the production environment. Simultaneously, the slaughterhouse-specific clustering of Salmonella highlights the need for targeted, risk-based interventions to further strengthen hygiene management and inspection strategies in South Korea.
