Recently, increased the nursing home and its residents because of the population growth of the elderly in Korea Food service in nusring home had for its object maintaining healty and taking pleasure in life, but a study of foodservice and dietary life in nursing home has not been made systematically till now.
This study was conducted to the elderly who resided in a private charged nursing home(A), a city-established free nursing home(B), a free nursing operated by religious organization (C) in Seoul and Kyoung-Ki province to investigate food and nutrient intake and food preference of the elderly of the nursing home.
The results were obtained;
1. Nutrient intake.
The average energy intake per day, the elderly of C nursing home got the most energy like 1770.8Kcal for made and 1546 Kcal for females (88.5%, 96.6% of RDA).
Energy intake of females got closer to RAD than that of males. In the average protein intake per day, there was difference (about 25g) between free and charged nursing home, and subjects of free nursing homes were poor of protein intake.
For the residents of charged nursing home, Ca and Fe intake were more sufficient than RDA. The residents of B nursing home showed an insufficient Ca intake and Ca, Fe were deficient for those of C nursing home.
Thiamine, niacin, ascorbic acid and vitamin A were higher than RDA for all subjects.
The residents of charged nursing home had no deficiency in vitamins, but those of free nursing homes were significantly deficient in riboflavin.
2. Intake of foods
In the average cereal intake per day, the elderly of C nursing home got the most cereal like 411.8g for males and 358.5g for females.
The subjects of charged nursing home took in the 70% of cereal intake than that of free nursing homes.
In meats and fish intake, the subjects of C nursing home took in three times more than those of free nursing home.
The residents of B nursing home had had a good intake in milk (200g) and small fishes (13.6), but those of the other two nursing homes were milk and small fishes intake poor.
The all subjects were in want of green yellow vegetables, but other vegetables were satisfactory, relatively.
And also all subjects were poor of their oils & fats intake.
3. Food preferences
The all subjects preferred cooked rice with cereals to cooked rice and the residents of charged nursing home liked cooked rice with barley and cooked rice with soybean and with red bean were preferred by those of free nursing homes.
The residents of charged nursing home had a weakness for for vegetable soup and those of free nursing homes preferred beef soup most. The preference for meats showed beef, pork, and chicken in order, and that for fishes was yellow corvenia, hair-tail, and allaska pollack in order, for all subjects in the three nursing homes.
The residents of charged nursing home preferred dongchimi, and those of free nursing homes liked baechu kimch'k most.
In food between meals, fruits, milk, and soda were preferred by charged nursing home residents, and fruits, rice-cake, milk, and candies by free nursing homes residents.
In preference of cooking method of a side dish, seasoned was likes by residents of A nursing home, pan-broiled by B nursing home and hard-boiled by C nursing home.
A majority of all subjects would like to have their meals cooked more tenderly, in addition to more salty, less salty, small in size.
