    This study aimed to examine the relationships among consumers’ experience with plant-based alternative foods, consumer perception, nutrition knowledge, and purchase intention, and to analyze the mediating effect of consumer perception and the moderating effect of nutrition knowledge. For this purpose, an online survey was conducted with 300 adults aged between 19 and 59 years, and the results are as follows.
    First, the analysis of experience-related characteristics regarding plant-based alternative foods showed significant differences in awareness and consumption experience according to demographic characteristics. Awareness of plant-based alternative foods differed significantly according to gender, subjective economic status, and health interest, while consumption experience showed significant differences according to gender and household size. Mass media (58.1%) and social media (30.6%) were identified as the major sources of awareness, and “curiosity about taste” (51.8%) was the primary motivation for consumption. In contrast, the main reasons for non-consumption were lack of opportunities for consumption (46.7%), lack of information on purchase locations (30.8%), and concerns about taste and quality (27.1%). These findings suggest that insufficient physical and environmental accessibility may hinder actual consumption experience.
    Second, the analysis of differences in major variables according to demographic characteristics revealed partially significant differences in consumer perception, nutrition knowledge level, and purchase intention according to gender, age group, and educational level. Significant differences in social-health perception and nutrition knowledge level were found according to gender and educational level, with female participants and highly educated groups showing relatively higher mean scores. In particular, participants in their 50s evaluated sensory-functional perception more positively and showed significantly higher purchase intention than those in their 20s. These findings suggest that acceptance patterns toward plant-based alternative foods may vary depending on demographic characteristics and age groups.
    Third, correlation analysis among the major variables showed significant positive correlations among all variables except for some paths related to general nutrition knowledge. In particular, sensory-functional perception showed the strongest correlation with purchase intention (r=0.690), suggesting that intrinsic product attributes such as taste and texture are closely associated with purchase intention. In contrast, nutrition knowledge showed a significant relationship with social-health perception, but no statistically significant relationship with sensory-functional perception or purchase intention.
    Fourth, consumer perception was found to fully mediate the relationship between consumption experience and purchase intention. These findings indicate that consumption experience with plant-based alternative foods does not directly influence purchase intention, but rather affects purchase intention through consumer perceptions formed by the experience itself. This suggests that purchase intention can be formed when experience leads to changes in perception.
    Fifth, the moderating effect of nutrition knowledge on the relationship between consumer perception and purchase intention was not statistically significant. These results suggest that general nutrition knowledge may not directly influence the strength of the relationship between perceptions of plant-based alternative foods and purchase intention.
    In summary, the findings of this study showed that adults’ consumption experience with plant-based alternative foods influenced purchase intention through the full mediating effect of consumer perception, while no moderating effect of nutrition knowledge level was identified. This study is meaningful in that it examined adults’ consumption experiences and multidimensional perceptions of plant-based alternative foods and empirically demonstrated that perceptions formed through experience play an important role in shaping purchase intention. Furthermore, the study suggested the importance of food choice competency for supporting consumers’ autonomous food choices.

    첫째, 식물성 대체식품에 대한 경험 실태를 분석한 결과, 인구통계학적 특성에 따라 인지도와 섭취 경험에서 뚜렷한 차이가 확인되었다. 식물성 대체식품 인지 여부는 성별, 주관적 경제 수준, 건강관심도에 따라 유의미한 차이가 나타났으며, 섭취 경험 유무는 성별과 가구 구성원 수에 따라 통계적으로 유의한 차이를 보였다. 인지 경로는 대중매체(58.1%)와 SNS(30.6%)가 주요한 비중을 차지했으며, 섭취 동기로는 ‘맛에 대한 호기심(51.8%)’이 가장 높게 나타났다. 반면, 미섭취 이유는 섭취 기회의 부족(46.7%)과 더불어 ‘구매처 정보 부재(30.8%)’, ‘맛과 품질에 대한 우려(27.1%)’가 주요 원인으로 분석되어, 물리적·환경적 접근성이 확보되지 않을 경우 실제 섭취 경험으로 이어지기 어렵다는 점을 시사한다.
    둘째, 인구통계학적 특성에 따른 주요 변수별 차이를 분석한 결과, 성별, 연령대, 최종 학력에 따라 소비자 인식, 영양지식 수준, 구매 의도에서 부분적으로 유의미한 차이가 확인되었다. 성별과 최종 학력에 따라서는 사회·건강 인식과 영양지식 수준에서 통계적으로 유의미한 차이가 나타나, 여성과 고학력자 집단에서 해당 변수의 평균 수준이 상대적으로 높았다. 특히 연령대에 따른 분석에서는, 50대 집단은 20대 집단에 비해 제품의 관능·기능 인식을 더 높게 평가하였으며, 실제 구매 의도 또한 유의하게 높은 것으로 확인되었다. 이는 연령대 및 인구통계학적 특성에 따라 식물성 대체식품을 수용하는 방식에 차이가 존재할 수 있음을 시사한다.
    셋째, 주요 변수 간 상관관계 분석 결과, 일반적인 영양지식과 관련된 일부 경로를 제외한 모든 변수 간에 유의미한 정(+)의 상관관계가 나타났다. 특히 ‘관능·기능 인식’은 구매 의도와 가장 강한 상관관계(r=0.690)를 나타내, 맛과 식감 등 식품 본연의 속성이 구매 의도와 밀접한 관련이 있음을 시사하였다. 반면, 영양지식은 사회·건강 인식과는 유의미한 관계를 보였으나, 관능·기능 인식 및 구매 의도와는 통계적 상관성이 나타나지 않았다.
