The optimal temperature of Lactobacillus bulgaricus was investigated with specific growth rate and biomass doubling time.
Optimal temp. was determined by inspection of graphs constructed by plotting growth numbers against cultural times, at 30℃, 33℃ and 37℃.
Specific growth rates per hour were determined from log phases of growth curves. Biomass doubling times were calculated from specific growth rates.
The results suggested that optimal temp. of L. bulgaricus has 37℃.

The growth curve obtained from the experiment showed that log phase ended after 9hr. The pH lactic acid formation curves demonstrated that PH was continually reduced, while lactic acid formation was continually increased during 13hrs. of growth.
