    Kimchi was ripened at 25℃ for 4 days and hearted at 100℃ for 10 minor 40 min. The pH of ripened Kimchi was not changed by heating, while sensory properties of kimchi, including overall acceptability, acidity, taste, odor and texture, were improved by heating, particularly by 100℃/40 min heating. Allyl mercaptan, methyl allyl sulfide. dimethyl disulfide, diallyl sulfide, diallyl disulfide and ethanol were detected in ripened kimchi. Volatile odor components expect ethanol and methyl allyl sulfide were removed by heating of 100℃/10 min while amount of ethanol was further reduced by heating of 100℃/40 min.
