This overview presents the historical development of the kimchi industry, highlighting key milestones and shifts in production methods and consumption patterns. We propose potential strategies for growth and innovation in the Korean kimchi industry. These include leveraging technology for production efficiency and quality control, diversifying product offerings to meet changing consumer demands, promoting kimchi as a healthy and versatile food option in international markets, and preserving traditional fermentation methods while adapting to modern preferences. By embracing these strategies, Korea can maintain its position as a global leader in kimchi production.
