김치산업에서의 인공지능(AI) 도입에 관한 탐색적 연구 = An exploratory study on the adoption of AI in the kimchi industry

Kimchi, a traditional Korean fermented vegetable dish, has emerged as a global health food trend, experiencing a surge in demand worldwide. Despite this global growth, the kimchi industry remains small-scale and reliant on traditional methods, limiting its competitiveness. This study underscores the necessity of adopting innovative scientific technologies, such as artificial intelligence (AI), to overcome technical limitations and enhance global competitiveness. Specifically, it details the development of 80 Context models, 476 Common data models, and 200 AI service models tailored for the kimchi industry, emphasizing the need to establish an ‘AI Kimchi Platform’. The integration of cuttingedge technology can improve quality and productivity, securing global competitiveness and enabling sustainable growth. Therefore, substantial investments in AI R&D and platform development by both the government and industry are essential. This approach promises to create a new paradigm that harmonizes traditional values with modern technology, positioning Korea as a global leader in the world market.
