    Evaluation for the effect of electron-beams irradiation (0, 0.1~1 kGy) on the qualityparameters of ‘Maehyang’ strawberries (Fragaria×ananassa) were performed to verify thefeasibility of irradiation treatment as a phytosanitary treatment. Electron-beams irradiation hadnot significant effect on weight loss, moisture content, water activity and total soluble solid in bothnon-irradiated control and all irradiated samples. However, firmness were significantly reducedin a dose-dependent manner (p<0.05). Phenolic acids and hydrolysable tannins and anthocyaninscontent maintained regardless of irradiation treatment, while flavonoids of irradiated-samplesincreased than control. Moreover, 0.1~0.8 kGy irradiated samples did not show significantchanges in sensory scores for overall acceptance compared to the control. Based on these results,it is considered that suitable electron-beams irradiation of strawberry was appropriate to achievephytosanitary purpose without adversely affecting physio-chemical changes and sensory qualities.
