This study reviewed the influence of the supervising attribute of hotel restaurant chefs’ supervision on the job satisfaction of staff. For this study data was collected by a specially developed questionnaire targeting 334 culinary department staff members of 10 hotels with similar size and environment in the Seoul area. First, the supervising attributes of the chef manager and then the influence on job satisfaction were verified, and the results showed all attributes had significant influence with a level of 0.05. The respecting type had a positive influence, while insulting type and critical types had a negative influence. Second, in verifying the results of the hypotheses, affective commitment controlled the influence of chefs’ supervision job satisfaction with the ability to regulate emotions.
