This study was conducted to identify the general and functional components of 8 domestic and foreign soybean cultivars produced in the Yeoncheon area. 100 seeds weight of soybean was the highest at 29.19 g of Cheoldu59 cultivar and lowest at 14.52 g of Nui 2 hu cultivar. Protein content ranged from 36.81% of Yeonpung cultivar to 39.69% of Cheoldu59 cultivar. The fat content was 19.62% of Shinpaldalkong2 cultivar to 21.55% of Gilyuk86 cultivar. Free sugars of fructose, sucrose, raffinose and stachyose were detected. raffinose content was ranged from 0.97% of Cheoldu59 cultivar to 1.14% of Gilyuk86 cultivar, and stachyose content was ranged from 2.50% of Jijori cultivar to 3.30% of Shinpaldalkong2 cultivar. The content of isoflavone was lowest in daidzein at 13.56 μg/g in Gilyuk506 cultivar, highest at 37.84 μg/g in Yeonpung cultivar and lowest in genistein at 3.67 μg/g in Seonnog cultivar, highest at 8.84 μg/g in Yeonpung cultivar. Summarizing the above results, it is considered that Shinpaldalkong2 and Cheoldu59 with high protein content and isoflavone content are good for ingestion or processing.
