Wheat is an important food ingredient in Korea. In Korea, personal consumption quantity has exceeded 30 kg since 1975. Most of the wheat is imported from USA, Canada and Australia. Recently, the domestic wheat self-sufficiency rate is set at 5% by 2025, and facilities and technologies are needed to establish a purchasing system for local wheat farmers. This study aimed to develop post-harvest quality evaluation technology for Korean wheat (7 species) varieties. In this study, several physical properties (weight, length, hardness, and color) were measured and analyzed by variety. To measure the wheat grain, used a digital scale for weight, a vernier scale for length and width, a universal test machine for hardness, and a colorimeter for color. To avoid researcher’s intention, the samples used were randomly selected from each breed and three different samples were measured. There are three grades of hardness: 88±8.0N (Arijinheuk, AJH), 105~119±19N (Yeonbaik, YB; Goso, GS; Geumgang, GG; Baikjung, BJ), and 131~139±15N (Hwanggeumal, HGA; Ariheuk, AH). Among seven varieties, the longest one is Hwanggeumal (HGA) 6.94±0.26mm (L), 3.46±0.21mm (W), and 3.03±0.20mm (D). On the other hand, the shortest one is Arijinheuk (AJH) 6.00±0.26mm (L), 3.14±0.15mm (W), and 2.63±0.17mm (D). HGA has an average weight of 0.05 g of a single kernel and an AJH of 0.03 g. And they have different chroma depends on the CIELAB color space. HGA’s L* is 47.83 ± 1.56, a* is 7.56 ± 0.50, and b* is 24.79 ± 1.08. AJH’s L* is 31.82 ± 1.14, a* is 8.31 ± 1.29, and b* is 16.75 ± 1.38. According to the measurements, further study will be conducted to develop a rapid and non-destructive wheat quality evaluation system.
