Nitrite is one of the effective antimicrobial agents for cured meat which impart special flavor and color, but its safety is questioning due to the production of nitrosamine, a carcinogenic substance, in food. Many efforts were made to find the effective alternatives and sorbic acid was assessed as the most effective alternative among other ones found. Sine most of artificial food-additives have their side effects in terms of food safety, there is a tendency to have a strict criterion in using the amount of foodadditives. In case of using sorbic acid, it has been found that the combination of small amount of sorbic acid and other materials such as NaCl, acid, CMC, and other antimicrobial agents has the some effect as using large amount of sorbic acid.
