This study proposes a makeup air–integrated hood system to improve cooking fume removal performance and protect workers in commercial kitchen environments. A baseline configuration (Case 1) was established to quantitatively evaluate the effects of supply air distance and airflow rate on pollutant behavior using computational fluid dynamics (CFD). The simulation results demonstrated that the balanced application of supply and exhaust airflow significantly stabilized the flow field above the cooking surface and effectively guided cooking fumes toward the exhaust hood. Based on the CFD analysis, a prototype makeup air hood system was designed and fabricated. Performance evaluation was conducted under severe pollution conditions using smoke generators and dry ice to simulate high particulate matter and CO2 concentrations. The experimental results showed that PM2.5, PM10, and CO2 concentrations were reduced to below indoor air quality standards within a short period when both supply and exhaust systems were applied. The experimental trends were consistent with the CFD predictions, validating the proposed design concept. The results indicate that the proposed makeup air hood system offers superior pollutant control compared to conventional exhaust-only systems and can serve as a practical solution for improving indoor air quality in school cafeterias and other commercial kitchen facilities.
