중소 식품제조업체의 이물저감화를 위한 제조공정 개선사례 연구 = Study about guideline for food manufacturing process improvement for foreign object reduction of small and medium food manufacturer

국문 초록 (Abstract)

연구조사의 목적
○ 본 연구조사는 과자류, 빵 또는 떡류에 대하여 중소 식품제조업체에서 적용 가능한 이물저감화 기술개발 및 제조공정 개선사례 발굴하여 “과자류 • 빵 또는 떡류 이물저감화 개선사례 및 혼입방지 가이드라인”을 제작하는 것을 목표로 하였다.
○ “과자류 • 빵 또는 떡류 이물저감화 개선사례 및 혼입방지 가이드라인”제작을 통하여 중소기업이 적용 가능한 방법을 학습하고 실행 가능한 방법을 선택하여 현장 적용토록 하여 이물혼입을 감소시키는데 그 목적이 있다.
연구조사 결과
○ 본 연구조사는 과자류, 빵 또는 떡류 생산 기업 중 대기업 및 중견기업을 대상으로 20개 공장을 선정하여 직접방문 현장조사를 실시하였으며, 연구조사를 통해 획득한 정보(사진 및 기록)를 집계 및 분석하여 “과자류 • 빵 또는 떡류 이물저감화 개선사례 및 혼입방지 가이드라인”으로 제작하였다. 본 가이드라인은 누구나 쉽게 가이드라인을 통해 정보를 획득할 수 있도록 사진을 최대한 활용하였으며, 중소기업에서 보다 현실적이며 실질적으로 활용이 가능하도록 다각적으로 집계 및 분석하여 작성하였다.
○ 이물혼입의 주원인 물질의 종류 및 발생 원인이 매우 다양하기 때문에 완벽하게 이물혼입을 차단하는 것은 쉽지 않으며, 기업별로 아이디어를 창출하여 관리하고 있으나 상호 기업 간 정보를 공유하는 사항에 있어서는 원활하지 못한 것이 현실이다. 특히, 동종 또는 유사업종의 경우는 더욱 그러하였다. 해서 이번 연구과제의 수행으로 작성된 가이드라인을 활용한다면 기업별로 미흡한 부분을 강화하는데 도움이 되리라 판단된다.
○ 수행한 연구과제는 주로 기업에서 실제로 행하고 있는 이물관리방법 및 설비에 대하여 조사하였으나, 조사된 방법 및 설비만으로는 만족스런 이물관리를 하는데 부족함이 있다고 판단하였으며, 이를 보완하기 위하여 향후 공정별 발생 가능한 이물혼입 발생 원인별로 이물을 제어할 수 있는 설비의 제작, 프로그램의 개발 등을 위한 다양한 연구가 수행되어야 할 것으로 전망한다.
연구 성과 및 기대효과
○ 이물혼입을 예방 및 관리하기 위한 여러 건의 연구조사가 수행되어 결과물이 도출되었지만 기업들의 활용도가 낮다고 판단되며, 이번 연구조사결과 도출된 가이드라인의 경우는 실제적으로 기업에 직접적으로 활용 가능한 동종 및 유사업종의 사례를 포함한 가이드라인의 개발 하여 활용도를 높였다.
○ 기업의 공정별 개선사례 및 현재 관리되는 관리점을 가이드라인에 담아 중소기업의 이물혼입 예방을 위한 기술지원 및 적용확대에 기여하리라 본다.
○ 기업에서 이물저감화 시설 및 장비를 구축함에 있어 다양한 정보의 획득 및 방법을 결정하는데 경제적, 시간적 비용을 최소화할 것으로 기대되며, 기업의 위생관리교육훈련 교재로 유용하게 활용될 것이다.
○ 정부의 이물저감화 정책입안 및 다양한 제도의 마련을 위한 기초자료로 활용될 것이며, 향후 추가적인 다양한 연구과제 제안 및 프로그램의 개발에 유용하게 활용될 것이다.

The implementation of research projects if they utilize written guidelines for each company to help strengthen the insufficient part shall be determined.

- Findings derived guidelines for companies that actually take advantage of directly available same and similar to the development of guidelines, including examples of industries raised the utilization.
