Nanotechnology has been noted as the next-generation main technology in many industries, including food processing, packaging and nanoparticulate delivery systems. In this project, we determined 1) production method based international level, 2) particle size and zeta potential, 3) particle shape, 4) encapsulation efficiency, 5) particle change during in vitro digestion 6) retention rate for core materials during in vitro digestion. Based on these data, we obtained a physicochemical analysis of nanotechnology-based foods. This physicochemical analysis can be useful to institutionlize for nanofoods.
