Silk protein is the product emitted by silkworm of a cocoon. Its protein is composed of 75% fibroin and 25% sericin. Silk protein is a highly purified natural protein which is easy for mass production. Recently, studies to develop functional food ingredients using silk proteins have been concentrated with having much interest. Acid hydrolysis method has been extensively used in industrialized production. However, studies of enzyme hydrolysis method still remain rare. In natural, enzymatic technology has been focused to produce silk protein hydrolysates by applying the acid and enzymes to silk protein. General food components, amino acid, change of composition of silk peptide, and silk amino acid of final protein hydrolysates were analyzed. Overall quality of enzymatic hydrolysates showed much higher than of acid hydrolysates. In addition, enzymatic hydrolysates of silk protein increased overall taste by reducing fishy favor and salty taste.
