As the number of bakery cafés continues to increase, competition among stores has grown increasingly competitive, making service delivery an essential factor for survival in the market. As a result, service quality in bakery cafés has gained attention as a differentiated strategy that enables businesses to accurately identify customer expectations and secure stable sales and competitiveness.
Against this social backdrop, this study empirically demonstrates the relationships among service quality, customer satisfaction, and revisit intention in bakery cafés, thereby providing foundational data for practical service implementation that internal stakeholders of bakery cafés should adopt. Based on previous studies, a research model and hypotheses were established, and a survey was conducted with 302 customers who had visited bakery cafés in the Seoul metropolitan area. The collected data were analyzed using SPSS 31.0 through reliability analysis, factor analysis, and correlation analysis.
The results of the analysis are as follows. First, service quality in bakery cafés was found to have a significant positive effect on customer satisfaction. This indicates that enhancing service quality is essential for achieving customer satisfaction and that a strong and tangible relationship exists between service quality and customer satisfaction. Second, service quality in bakery cafés was found to have a significant positive effect on revisit intention, suggesting that higher service quality strengthens customers’ intention to revisit. Third, customer satisfaction in bakery cafés was found to have a significant positive effect on revisit intention, implying that individual satisfaction is an important factor in shaping revisit intention.
Overall, the findings empirically confirm that service quality in bakery cafés positively influences both customer satisfaction and revisit intention. In particular, reliability was identified as the most critical factor in shaping customer satisfaction and revisit intention. Menu quality had a stronger effect on revisit intention than on customer satisfaction, while interaction had a stronger influence on customer satisfaction but a relatively weaker effect on revisit intention. In contrast, the physical environment was found to have the weakest influence compared to other service quality factors.
Therefore, bakery café managers and industry stakeholders should prioritize strategies that enhance reliability and menu quality to promote customer satisfaction and encourage continuous revisit behavior. This study identifies service quality management in bakery cafés as a key driving force that creates a positive cycle extending beyond customer satisfaction to revisit behavior. Academically, this study expands the scope of related research, and practically, it provides important implications for establishing effective service strategies in bakery cafés.
