The fermentative production of citric acid from glucose has been studied in detail using candida lipolytica (thiamine auxotroph). The productibility of citric acid was remarkably affected by the pH and the reaction temperature. The condition of pH6 has the most productibility of citric acid. Immobilized yeast cell was prepared by entrapping the whole cell within Ca-alginate matrix. Immobilized yeast cell has mild substrate inhibition. The productivity of citric acid was remarkably affected by the air flow rate.
